Quichzza (it’s a quiche pizza!)

GO GET SOME PIZZA DOUGH.

And make this. Or make your own pizza dough. That is fine too.  Then make this.

So Monday.  Monday I got home from my office and Andrew was like, “you have chocolate on your shirt.” So I looked down and sure enough there was chocolate on my shirt. And then I was like, “I didn’t eat chocolate today.”  Life is rough sometimes.

End story time.

Now.  A quiche is pretty much already a pizza.  I mean, they both have a crust.  So this is actually a pizza-quiche-pie.  All are foods I enjoy and here they are rolled into one skillet.

So it starts with a pizza dough.  I used a whole wheat store-bought dough.  You over-grease a skillet (similar to how I over-share at times), then you press in the pizza dough and add in toppings GALORE.

Do you have to use eggs? No.  But then this wouldn’t be a quichzzza.  And you want this to be a quichzzza, just so you can say quichzzza.  

Quichzza, quichzza, quichzza.

So scramble up some eggs with your favorite things to pair with eggs.  I don’t care what you add as long as you add cheese.  I added red bell peppers, canned tomatoes, chives and sharp cheddar into the eggs and then poured it into the pizza dough.

Let’s talk tomatoes for a hot sec.  I used thick, chunky canned tomatoes.  Have you ever eaten at BJ’s Pizza?  Their pizza has chunky tomato chunks on it and I love it.  So their pizzahhhh inspired this quichzzza.

Then I baked the thing and topped the finished quichzza (See what I did there? I got to say quichzza again)…and then I topped it with crispy bacon, basil and avocados.  

I know.  Basil and avocados? But I went for it.  And the good news is that bacon goes with EVERYTHING so the whole thing works.

Quichzzza

Yield: one 9" skillet pizza

Prep Time: 10 minutes

Cook Time: 25 minutes

Total Time: 35 minutes

Ingredients:

pizza dough of choice
5 eggs
3/4 cup sharp cheddar, grated
1/2 cup red bell pepper, finely chopped
1/2 cup canned diced tomatoes, rinsed and drained
1/4 cup chives, sliced into 1/4" slices
pinch sea salt & pepper
toppings: cooked bacon, fresh basil, avocado

Directions:

Preheat oven to 450ºF.  Grease a skillet with olive oil and sprinkle with a bit of cornmeal to make it super non-stick.  Press pizza dough into skillet and up onto sides.  In a bowl, whisk together eggs, cheese, bell peppers, tomatoes, chives, salt and pepper.  Pour egg mixture into the un-baked pizza dough.  Bake for 20-25 minutes, or until eggs are set.  Check after 10 minutes to see if pizza crust is browning too quickly.  If it is, cover the crust edges with foil and then continue baking until eggs are set.

Top with bacon, basil and avocado slices.  Slice & serve!

  15. I accidentally doubled the recipe lol. Sautéed onions and asparagus and it took 10 eggs to cover it all. I’ve obviously never made quiche before. Bake it twice as long??
