Unicorn Bait

It’s pretty much fact that to catch a unicorn you need peanut butter and sprinkles.  I read it on the internet one time.  In the same article it talked about carbohydrates being evil and how BeachBody coaches should give nutrition information.  Funny those three things were in the same article.

But the unicorns! This is how you catch them:

1) Put all the ingredients for peanut butter cookie dough into a bowl.

2) Add sprinkles.  Add a lot of sprinkles to attract a big unicorn and a little sprinkles to attract a baby unicorn.

3) Mix up dough.

4) Roll dough into balls and bake.

And the voila!

The unicorn should be at your front door.  If you live in an apartment complex, the unicorn will be waiting by the pool area because they like to swim and grill.  Who knew?!

It should be known that this was not my idea.  There is an ice cream place in Houston called Fat Cat Creamery.  (“Fat” being used as a descriptor and not as a word with a negative connotation.)

And when I was there I saw a clear jar sitting on the counter with sprinkle bedazzled cookies inside and a big label that said “unicorn bait”.  How happy! 

While I didn’t try their unicorn bait (it was an ice cream mood kinda night), I thought the name was so creative.  So here we are with me filling my life (and now your life) with the things of dreams.

Now let’s talk cookie texture.

The cookies are soft and doughy in the middle, because this is the blog of only soft and doughy cookies.  I feel like they have the look of a crunchy cookie, but they’re not crunchy.  Unless you walk away and forget them in the oven and they get overbaked.  In which case you will have zero unicorns appear at your door because unicorns hate crunchy cookies.  It’s true! Just ask them.

Unicorn Bait (aka peanut butter cookies with sprinkles)

Yield: makes 9 cookies

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

1/2 cup all-purpose flour
1/4 cup wheat flour
1/4 teaspoon baking soda
1/4 teaspoon baking powder
1/2 teaspoon salt
1/4 cup creamy peanut butter 
1/4 cup butter, softened
1/4 cup brown sugar, packed
2 tablespoons granulated sugar
1 large egg yolk
1/2 teaspoon vanilla extract
2 tablespoons milk
sprinkles (here are a vegetable dyed version)

Directions:

Preheat oven to 350ºF.  In a bowl, combine all ingredients until a dough forms.  If you want to catch a big unicorn, use a lot of sprinkles.  If you want to catch a baby unicorn, use less sprinkles.  Roll dough into 9 balls.  Place on a greased cookie sheet and bake for 9-12 minutes, leave slightly doughy.
