Breakfast Banana Splits with Peanut Butter Graham Crunch

I mean, I know I put “breakfast” in the recipe title, but this recipe was made for brunching on.

If you are wondering, “what exactly is a peanut butter graham crunch?”  

Well.  Let me explain.  

It’s your new favorite thing and I already have 8901 more ideas for other recipes to make with it.  

So what is it? It’s mashed up graham crackers mixed with peanut butter and maple syrup.  And it’s the bees knees.  (vegan friends, not literally<3)

So you don’t have to use peanut butter.  You could use one of the other lesser nut butters (kidding).  And since I’m giving out advice, you should definitely not take out the kiwi, because ohh geez kiwis are the prettiest fruit.  Every breakfast of mine from now until forever should have kiwis.  And then I’d be known as the girl with the prettiest breakfast because kiwis.

Gonna work on that.

I’m also going to work on when I have uncomfortable feelings thinking, “i’m grateful I’m feeling this, because this means I’m living.”  

For instance.  When the neighbor’s lawn crew launches a rock through your car window and shatters it and you can’t drive your car for 4 days because it’s been raining buckets/winding as The Wizard of Oz and the insurance company won’t fix it for 4 days AND you have to (get to) share a car with your husband everyday for 4 days AND you can see his brain turning thinking ya’ll could totally be a one car family and you’re like NOOOOOOOOO.  

Yes.  I’m grateful for all those uncomfortable feelings and having healthful coping mechanisms to be able to deal with them: hello, face masks, progressive muscle relaxation (that Rachael introduced me to!), walking with Maggie, yoga, coloring books, reading, and talking with (aka dumping all my problems on) my friends/sisters/mom.

Moving on.

hmm.  What last tidbit of knowledge should you know about these splits? They’re fun.  Probably more fun than real splits, because try as I might I’ve never been able to do a real splits. 

You should know you can add any toppings you want, but peanut butter graham crunch MUST be included.

Breakfast Banana Splits

Yield: serves 1 (but easily doubled, tripled)

Total Time: 10 minutes

Ingredients:

banana splits
1 ripe banana
toppings: greek yogurt, kiwi, blueberries, toasted coconut flakes

peanut butter graham crunch
1 tablespoon peanut butter
1 tablespoon maple syrup
2 graham crackers

Directions:

First, make your pb graham crunch.  In a bowl, use your fingers to crush the graham crackers into small pieces.  Mix in peanut butter and maple syrup until the mixture sticks together.  

Now.  Slice your banana in half.  Press all the pb graham crunch, except for one tablespoon of it, onto the sliced bananas.  Top with remaining toppings and extra tablespoon pb crunch.  Eat with a fork or spoon or hands.  You do you.
