You crumble a graham cracker into the oats and let it soak overnight. Sound a bit weird? Perhaps. While the graham cracker doesn’t stay crunchy, you get all the delicious graham cracker flavor. And who doesn’t love graham cracker flavor?
I have a story.
So I totally have this knack for picking out maternity swimsuits when shopping at Target. The only problem is I’M NOT PREGNANT. I tend to lean more towards one piece swimsuits because I think they’re 1) classier 2) more gorgeous than 2 pieces and 3) I feel less exposed in them.
Yay body positively and two piece bathing suit wearers, but yay feeling like your special bits aren’t exposed to the world.
So I was swimsuit shopping at Target and found one I liked and just before checking out, I realized it was a maternity swimsuit. UGH. I would’ve bought it, but I already accidentally bought a maternity swimsuit a year ago and the fit is all wrong and baggy once the swimsuit gets wet AND I assumed it’d be the same situation with this suit. Where do you buy one piece swimsuits that don’t cost $300?
Don’t ya just wanna swim in that bowl of oats?

So I’ve discussed that I’m not a big fan of greek yogurt in my overnight oats/muesli. I like them milky and yogurt free. But my mind is blown with this combo.
Into the mix goes almond butter, ground flax, oats and graham crackers. I think we should do a s’more muesli. Now wouldn’t that be way too fun? Actually I think it’d be just the right about of fun.
Back to the current situation. Then I topped the muesli with grapefruit slices (so fresh<3), hemp seeds, pistachios and a bit more crumbled graham crackers. It’s gonna be the most delish experience of your life…until the next fabulous food idea comes along.
Yield: serves 1
Prep Time: 5 minutes + overnight chill time
1/3 cup oats
1 graham cracker
1 tablespoon almond butter
1/2 cup milk
1/2 tablespoon ground flaxseed
toppings: thinly sliced Sweet Scarletts grapefruit, pistachios, hemp seeds, crushed graham crackers
In a bowl, combine oats, a crushed graham cracker, almond butter, milk and ground flax. Mash/stir almond butter into oats until is dissolves, this may take a good amount of stirring. Cover and place in the fridge overnight. In the morning, top with Sweet Scarlett grapefruit, pistachios, hemps seeds, and crushed graham crackers.
