Peanut Butter Coconut Power Breakfast Bars

And they may or may not be doughy and delicious.

ANDDDD they may or may not also have blueberries, peanut butter, almonds, and coconut flakes.  

What else could you add? Pretty much anything your heart can dream.  Perhaps you’d add 3 types of berries at once.  Perhaps.  Or you’d add pineapple for a tropical twist.

OH! Are you wondering why the word ‘power’ is in the title? Because it’s a trendy buzz word…that’s why! I really don’t think these bars will make you more powerful than another bar, but they are mega delicious and satisfying which is something I hope everyone wants in their breakfast.

Now.  The word ‘breakfast’ is in the recipe title, but that doesn’t mean you have to reserve these only for breakfast.  You could have these guys for snack time or dessert or after lunch treat.  The options!  There are SO many!

I ate these for dessert.  

Andrew ate them for breakfast.

Let’s have a recipe overview.  These are doughy bars that are bursting with blueberries.  So they’re like a blueberry muffin…but doughier!!!!!!  

So, to be clear.  These bars are everything you want if you are like me and you too like doughy things.

Peanut Butter Coconut Power Breakfast Bars

Yield: 1, 8x8” baking dish; 8 bars

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

1 cup wheat flour
1 cup rolled oats
3/4 cup peanut butter
1/2 cup milk
1/3 cup brown sugar, packed
2 tablespoons honey
1 tablespoon vanilla
1 teaspoon baking soda
1/4 teaspoon salt
3 tablespoon dark chocolate chips
1/2 cup blueberries
1/4 cup sliced almonds
1/4 cup unsweetened coconut flakes

Directions:

Preheat oven to 350ºF.  In the bowl of an electric mixer, combine first 10 ingredients until a dough forms.  Press dough into a greased 8x8” baking dish.  Gently press blueberries, sliced almonds and coconut flakes into the top of the dough.  Bake for 18-20 minutes.  I left mine a little doughy because I’m me and this recipe had no eggs, so there were ZERO reasons to not leave this doughy.  Slice into 8 bars and eat throughout the week.

    • Hi Campbell! I don’t have the nutritional content. I like to focus more on just eating more real foods than thinking about calories, fat, protein, carbs, etc. I hope you enjoy the bars if you decide to make them;)
