S’mores Baked Oatmeal

Meet my breakfast for the past 3 days.

You meet s’mores for breakfast.  S’more for breakfast meet you.

Now before we get too far into this recipe.  I should disclose that I used bananas instead of marshmallows.  I did this for a number of reasons:

1) if you bake marshmallows they disappear (bummer)
2) because bananas are delicious
3) marshmallows are one of those foods I can take or leave

If marshmallows aren’t a take-or-leave kind of food for you, add them on during the last 5 minutes of baking time so they get nice and puffy and golden.

Thoughts to make this baked oatmeal even more s’more-like = if you can find a campfire, you should use it to cook this baked oatmeal.  I’m not sure how that would work, but I’m sure you can find a boy scout or a manly man who knows how to cook over a fire.  Actually, don’t do that.  That sounds complicated.

Moving on.

I’m so in love with baked oatmeal.  Let’s take a trip down baked oatmeal memory lane: grapefruit streusel baked oatmeal, carrot cake baked oatmeal, and pumpkin snickerdoodle baked oatmeal.  That grapefruit streusel one is pretty high on the favorite breakfast list.  BUT THIS.  THIS s’mores oatmeal is a wee bit higher on that ahh-my-gosh-yummy-breakfast list.

Let’s have a brief discussion on baked oatmeal and why they’re fun.

Baked oatmeals are fun because they’re a dense oatmeal cake for breakfast.  And this one has gone s’mores style because summer AND s’more weather is coming! IT’S COMING.  So step 1) is to test this recipe out before summertime s’more weather arrives.  

You are gonna love it.

S'mores Baked Oatmeal

Yield: serves 4-5

Prep Time: 10 minutes

Cook Time: 40 minute

Total Time: 50 minutes

Ingredients:

baked oatmeal
2 cups rolled oats
1 cup milk
1/2 cup natural almond butter
1/3 cup maple syrup
2 1/2 tablespoons butter, melted
1 large egg
1 teaspoon vanilla
1/2 teaspoon cinnamon
scant 1/2 teaspoon baking soda
1/4 teaspoon salt

toppings
chocolate chunks (i used 62% scharffen berger baking chunks)
2 bananas, thinly sliced
5 graham cracker sheets, crumbled

Directions:

Preheat oven to 350ºF.  In a bowl, combine all baked oatmeal ingredients.  Pour into a greased oval dish (I greased mine with coconut oil).  Top with chocolate chunks, bananas and crumbled graham crackers.  Cover with foil and bake for 40 minutes, or until oatmeal is set.

  1. I adore baked oatmeal! It’s been the most convenient breakfast for me this semester. 
    I love marshmallows in one form: traditional s’mores. When the marshmallow is burnt and gooey and in between two graham cracker with chocolate. Yum! But you are so right, marshmallows vanish when they are baked! So sad, but banana is a great sub!

  2. Using banana in place of marshmallows is such a good idea! I am not the biggest fan of marshmallows either.

  4. Holy yummmmm. I need this. I have an entire Pinterest board dedicated to smores. And may or may not be doing smores instead of a cake at my wedding. Ahhh I can’t wait to make this!

    PS marshmallow cream/fluff and vegan marshmallows don’t disappear when baked if you ever need for the future
