Slab Breakfast Grilled Cheese

This is like a slab pie, but cheesier. And with kale, bacon and eggs.  It’s worth filling your breakfast with.  Assuming it’s a day you’re craving something savory for breakfast.  If you are craving something sweet for breakfast you should make s’mores baked oatmeal.

If there is something there is definitely not a shortage of on this blog…it’s cheese, oatmeal and chocolate.  Today let’s discuss cheese.  Because I’ve been told that today is National Grilled Cheese Day.  I know what you are thinking, “how lucky that we live in a world where National Grilled Cheese Day is a thing!!!!!”

For this recipe I used Tillamook Cheese Slices.  I’m a bit particular about my cheese slices, but these lived up to what a cheese slice should be (aka thick and sharp).

My dilemma with some cheese slices is that they taste a bit waxy and wax is a bit meh.  This cheese doesn’t taste meh.  They actually taste like cheese, which is key if you are craving cheese.  AND the fact that they make a sharp cheddar works for me.  The sharper the better.

Step one to making this recipe is going to the grocery store and buying the most delicious looking loaf of focaccia or ciabatta bread you can find.  

Step two is grilled cheese-ing that loaf.  You slice the loaf in half and top with cheese and broil.  Then add breakfast-y ingredients, such as but not limited to: eggs, bacon, kale and pesto.

Step three you take in the look and smell of the melted cheese before take a bite.  Then repeat with another bite.

Step four is you have me over for a savory breakfast with you.  

I’ll bring the iced lattes because I’m me.  And if you’ve been reading this blog for a while, then you know me and would expect nothing different than an iced latte.

So moral of the story = enjoy this cheesiness.

Slab Breakfast Grilled Cheese

It's like a breakfast slab pie.

Yield: serves 4-5 (but depends on size of loaf you use)

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

1 loaf focaccia or ciabatta
6 slices Tillamook Sharp Cheddar Cheese Thick Slices
6 slices Tillamook Colby Jack Cheese Thick Slices
3 tablespoons pesto
6 eggs, scrambled
6 strips cooked bacon
3 cups kale, rinsed and stem removed
1 tablespoon olive oil

Directions:

Preheat oven broiler.  

Heat 1 tablespoon olive oil in a sauté pan over medium heat.  Add in kale and sauté for 2 minutes.  Add in 2 tablespoons water to help kale continue to wilt for at least 5 minutes.  Turn off heat and set aside.

Slice your loaf of bread in half.  Top one half with pesto and 6 cheese slices.  Top the other half with remaining cheese slices.  Put under broiler until cheese is melted.  Once cheese is melted & gooey & crispy (yes, cheese can and should be all those things at once).  Top with cooked bacon, scrambled eggs, and sautéed kale.  Put the other cheesy half on top and slice into a zillion little grilled cheese sandwiches.

  1. This is awesome- everybody’s grilled cheese in one go! I am a lover of cheese- especially block cheese. I find slicing a block of cheese up taste better than pre-cut cheese. 

  2. I’ve been noticing how much you love iced lattes! I’m addicted too. Instead of spending lots of $$$ each week at Starbucks, I purchased a nespresso (the pixie) and it was the best decision I’ve made all year! You should check it out. So worth it.

  3. Yes yes and yes! I absolutely love everything about this. I’ve never had a grilled cheese on focaccia before but my mouth is already watering – cannot wait to try this! 

  4. Such a fancy grilled cheese! I am so not a sharp cheese person, but I am sure this would be fab with any kind of cheese!
