DIY Caramel Coconut Milk Coffee Creamer

I am in the process of marble-ifying everything in my life.

Uncommon Goods asked if I’d like to pick out a few things from their site to share with you and I said something like, “well, since I’m marble-ifying my life, getting marble glasses from you seems very much in line with my values.”

So here we are with me being the proud owner of marble cups.  Next thing to be marbled will by my kitchen countertops.

It’s all faux marble because I hear real marble stains and I have a gift for spilling things.  These cups are made of glass and my future countertops will be quartz.  But shhhh no one will know it’s not real.

Into these pretty glasses went iced coffee.  Because I am me and this is the place where I share things I like.

3 things! AND THAT’S IT.  How easy? SO EASY.

You don’t even have to use the vanilla beans.  And you don’t even have to use goat’s milk caramel.  You can use whatever type of caramel you find at your grocery store.  

Why did I used coconut milk? Is it because coconut milk is better for you than regular cow’s milk cream? No.  It is simply because I had a can of full-fat coconut milk in my pantry and wanted to use it up.

I think this weekend I’m going to experiment with some different creamer flavors.  I’ll report back soon on that.  Or I might get distracted and forget to make different coffee creamer flavors.

Andrew says that hopefully we’ll be putting in the kitchen floors this weekend.  The workers are very nearly done with their part (taking out the walls, putting in beams, updating electrical/plumbing) and now it’s time for Andrew and me (and hopefully Andrew’s dad bc I’m a bit useless when it comes to power tools) to put in the flooring and cabinets.  Then workers will come back to install the countertops and update the electrical in the rest of the house.  Or.  At least I think that is what is happening.

So that’s my weekend.

DIY Caramel Coconut Milk Coffee Creamer

Yield: ~2 cups creamer

Total Time: 5 minutes

Ingredients:

1, 15oz can full-fat coconut milk
8 oz caramel
1 vanilla bean, seeds scraped out

Directions:

Heat all the ingredient in a sauce pan over medium-low heat until the caramel dissolves, about 3 minutes.  Carefully pour into a jar to cool a bit and then add to your hot and iced coffee creations. 

For my iced lattes I do half milk, half coffee and a pour of creamer.
