Ohh. What is it?!
It’s like a fruit crumble bar, but it’s not in a bar form. Instead all the ingredients are layered in a bowl and microwaved. And then you eat it for breakfast!
More specifically, it’s oat-y, almond butter-y, fruity goodness.
When I made this recipe we were oven-less and I was missing creating things in the kitchen, so microwave creations it was. I’m sure you could bake this crumble bowl in the oven…i’d guess 350ºF for 10-12 minutes would do the trick.
So the middle of the bar is fruit (aka like every crumble bar you’ve probably seen). You could use a jam or jelly or preserves or nutella. I used sliced strawberries, but really so so many fruits would do. Perhaps you replace the almond butter with peanut butter and replace the strawberries with bananas. That would be a good idea.
But the strawberry + almond butter combo works. Do that first. Then experiment.
So right now I’m writing to you from my couch at 7:08am. As soon as I finish this post I need to go pack and get on a plane. I’m going to Arizona to visit a residential treatment facility for eating disorders. The treatment facilities fly dietitians/therapist/clinicians out to tour their facilities in case I ever need to send clients there. It’s gonna be a quick trip, but I’m looking forward to it.
And I like really get excited about airport food. Even though it’s overpriced and not that great…I just find it exciting. Probably because when I think airport, I think vacation and when I think vacation, I think happy. I’m not gonna remind myself this isn’t actually a vacation. shhh. I won’t tell myself if you don’t.
Yield: serves 1
Total Time: 10 minutes
4 tablespoons rolled oats
2 tablespoons white flour
1 tablespoon whole wheat flour
1 tablespoon brown sugar
1 tablespoon almond butter
1/2 tablespoon coconut oil
pinch salt
1-3 tablespoons milk
fruit of choice
Mix together all the ingredients except the milk and fruit. Once the mixture comes together a bit, add in the milk 1 tablespoon at a time until a cookie dough mixture forms. Press half the dough into a bowl, then add a layer of fruit (i used strawberries), then add the remaining dough. Microwave for 1 minutes, or longer or shorter depending on your preferred doneness level. ENJOY!
