Honey Lemonade with Layered Ice Cubes

So festive.  I know!  

I’m the proud owner of all the non-matching dishes in the world.  I have one copper mug, one pineapple cup, one unicorn bowl and at least twelve different cloth napkins.  I tend to buy one bowl/cup/napkin rather than sets because that keeps food photography more interesting.

Nothing in my life matches tho.  Right down to my socks.  And I don’t get matching things because don’t people say that brown and black together don’t match? I totally don’t get that because Maggie is brown and black and she looks great.

In other news, I really want to turn out guest bedroom into a food photography prop storage room, because we rarely have guests.  I mean, a guest has slept in that bed once since we got married.  Only one guest! All that to say, maybe you should come stay in my guest bedroom.  Yes, and you could help me organize my life and motivate me to get things done when I don’t want to get things done.  And we would come up with the most fun breakfast ides, because that is how we’d like to spend our time.

So this lemonade.

You know how they always say, “when life give you lemons, make lemonade in a pineapple tumbler?” Well that is exactly what I did.  And not just any lemonade, but honey lemonade.  In my mind I imagine bees would find this drink really attractive, so drink it outdoors at your own risk.  I think I’m kidding, but I’m really not sure.

Now.  This is not just lemonade, but it’s lemonade with layered ice cubes made out of Bai.  Basically you pour one flavor of Bai Bubbles (i used Waikiki Coconut) into an ice cube tray and then add fruit + mint leaves.  Then freeze.  Once frozen you pour in another layer of a different Bai Bubbles (i used Jamaica Blood Orange for the second layer) and then freeze.  Then out comes colorful little ice cubes.  You could even do three layers in each ice cube if you are an overachiever and you like pretty things.

Last little note I have for you: Since lemonade is super sweet (duh), I preferred this drink mixed with one of the many Bai Bubbles flavors.  My favorite combo was half honey lemonade + half Gimbi Pink Grapefruit.

Honey Lemonade with Layered Ice Cubes

Yield: 6 cups honey lemonade

Ingredients:

honey lemonade
3 cups steaming water
1/2 cup honey
1/3 cup sugar
2 cups fresh squeezed lemon juice

ice cubes
2 Bai Bubbles flavors (I used Waikiki Coconut and Jamaica Blood Orange)
fruit
mint leaves

Directions:

The day before you want to serve, prep your ice cubes.  Fill each ice cube mold halfway with one flavor of Bai Bubbles.  Add in fruit and mint.  Freeze until set.  Add in another flavor/color of Bai Bubbles.  Freeze until set.

In a pitcher, combine hot water, honey and sugar until sugar is dissolved.  Stir in lemon juice.  Place in fridge until cooled.  

Pour honey lemonade over ice cubes.

As mentioned above...since the lemonade is pretty sweet (because lemonade is sweet), I like to do 50:50 lemonade to Bai Bubbles.

  1. I’m obsessed with Bai drinks! They supply them at my work office now and it honestly even boosts my work happiness. Ha! I want to try the new Bai tea drinks but I can’t seem to find them anywhere. Neat idea to use their drinks to make pretty ice cubes.
