Honey-Sweetened Cherry Pie Baked Oatmeal

I’m annoying myself with how many baked oatmeal recipes I post.

But since I’m all about self-compassion these days, I’m really not that annoyed with myself.  I am more just understanding of my love for baked oatmeal.

I was going to make this baked oatmeal in the same dish that I usually make baked oatmeal in, but then! THEN! I was like, “I should make this as pie-ish as possible.”

In other news (aka things you don’t really need to know, but I’m gonna tell you anyways).

Andrew and I recently downgraded our cable. Did I already tell you this? We now get only the basic cable channels. So we have like 5 channels. So far tv shows I miss include: The Pioneer Women and Million Dollar Listing. Since remodeling the kitchen I am so over HGTV.  The same thing happened when I bought my wedding dress…I ended up being so over Say Yes to the Dress.  And I still don’t enjoy Say Yes To the Dress.  Gosh.  I did not enjoy the wedding planning process.

Any who.

I tell Andrew now that we are saving money on TV, that means we have more money to invest in ordering lattes out at restaurants. He doesn’t see it that way, but I’m sure you do.

I really enjoy making breakfast at home 85% of the time, but I enjoy drinking lattes out 100% of the time.  I need a fancy espresso machine that makes epic steamed/foamy milk.

AND OOOOOHHHH.  This place by us has nitro coffee, which I’m pumped to try.

All that talk to say…you should make this baked oatmeal and serve it with a latte.  I preferred this recipe with a hot latte, but that’s just me.

For this oatmeal, into the pie dish goes a layer of baked oatmeal.  Then the cherry pie filling.  Then a sprinkle of chocolate chunks (if you want!). Then another baked oatmeal layer.  Bake it up.  And then please enjoy pie-ify-ing your breakfast.  I have been doing just that for the last 3 days and I haven’t gotten tired of this recipe yet.

Honey-Sweetened Cherry Pie Baked Oatmeal

Add pie to your breakfast routine.

Yield: 1, 9" pie

Prep Time: 15 minutes

Cook Time: 40 minutes

Total Time: 55 minutes

Ingredients:

baked oatmeal
2 cups old-fashioned oats
1 cup milk
1/3 heaping cup mashed banana
3 tablespoons butter, melted
2 tablespoons honey
1 egg
1 teaspoon vanilla
1/2 teaspoon baking powder
1/4 teaspoon salt
dash cinnamon

cherry pie filling
1 1/2 cup cherries, pitted
2 tablespoon honey
1/2 cup cold water
1 tablespoon cornstarch 

optional
chocolate chunks

Directions:

First make pie filling.  In a bowl, mix together cold water + cornstarch.  If you add cornstarch to hot water, you will end up with a globby mess.  Don't do that.  Stir cold water + cornstarch until cornstarch is dissolved.  Add cherries, honey and dissolved water + cornstarch mixture to a sauce pan.  Heat over medium-high heat for ~10 minutes, or until cherries start to break down.  While cherries are cooking, make your baked oatmeal batter.  

In a bowl, combine all baked oatmeal ingredients.  Pour half of the batter into our greased 9" pie dish.  Top with cherry filling.  If you want to add a handful of chocolate chunks, this is the time to sprinkle them on.  I added them and LOVED them.  Pour remaining oatmeal batter onto cherry filling to completely cover filling.  Bake for 30-40 minutes, or until top of oatmeal is JUST set.  The mixture may feel a bit jiggly, due to the cherry filling not completely setting.  Allow to cool at least 15 minutes before slicing.
