Peanut Butter Oatmeal Greek Yogurt Pancakes

Just in time for the weekend…

Not to say you can’t have these on a weekday (pssst. i ate these on a Thursday), but typically I think everybody has more time on the weekend to make something that takes a bit of time.  But maybe you’re one to get up early on a weekday just to make a super fun breakfast.  I like doing things that make weekdays feel more like weekends, which is why I love meeting friends for at least one breakfast date during the week.

So. These pancakes.

I really like trying fun, different pancake recipes like peanut butter stuffed pancakes or the best coconut flour pancakes, but there is something about classic, go-to recipes that get me pumped.  I’ve told myself that to be a fabulous cook, all you need to know is how to make the following 6 things well:

1) pancakes
2) cookies
3) stir-fry
4) lasagna
5) breakfast tacos
6) a go-to cocktail

Master those 6 and you can go places in life.

I would consider this here recipe a pretty classic recipe.  It’s simple enough to memorize and throw together on a random morning when you feel like impressing someone with your pancake making skills.  Or perhaps the person you impress will me yourself.  That is totally okay too.

I’m all for eating satisfying foods.  And these pancakes are just that.

I think I’ve talked before about how I actually used to hate pancakes.  My best friend’s family would make them with whole wheat flour and for whatever reason I really didn’t like them.  I think I was just an annoying child and I think I would totally love their pancakes now, but then I wasn’t a fan.  And now here I am adding whole wheat flour to my pancakes by choice because I think it totally does make them taste better.  Whole wheat things just have more character, ya know? 

Except croissants aren’t whole wheat and they have plenty of character.  Oh.  And cinnamon rolls aren’t whole wheat and they too should remain whole wheat-free.  However, in my opinion, when it comes to pancakes or waffles, whole wheat flour does wonders.

Side note: I feel like I’m doing summer wrong.  I’m sitting here (at 11pm…i totally am failing at my 10:45pm bed time I attempted to set for myself) and I’m drinking hot chocolate even though it’s 90+ degrees outside.  And I can count on my hand the number of times I’ve swam in a pool/lake this summer.  

I’m pretending that pancakes are a summer thing tho because anytime you a pair an iced latte with something it becomes a summer thing.  Or that’s how things work in my life.

These summer pancakes (see what I did there), are light and fluffy but still hearty thanks to the oats and peanut butter.  I’m very interested in how they would turn out if I replaced the peanut butter with nutella.  May need to test that idea this weekend.  I’ll let ya know.

Peanut Butter Oatmeal Greek Yogurt Pancakes

Yield: makes 4 small-medium pancakes (serves AT MOST two people)

Total Time: 15 minutes

Ingredients:

dry ingredients
1/4 cup rolled oats
2 tbsp all-purpose flour
2 tbsp whole wheat flour
1/2 teaspoon baking soda
pinch salt
pinch cinnamon

wet ingredients 
6 tbsp milk
1/4 cup greek yogurt 
2 1/2 tbsp peanut butter
1/4 teaspoon vanilla 
1 egg
toppings: nutella, maple syrup

Directions:

In a bowl, mix together all dry ingredients.  Make a well in the center of the dry ingredients and add in wet ingredients.  Combine until a batter forms.  Grease a pan (I used coconut oil to grease mine) and heat over medium.  Pour on pancake batter to form small/medium-sized pancakes.  Flip once edges start to dull.  Should make about 4 pancakes.  Top with desired toppings: honey, maple syrup, mango, berries, cherries, nutella, more peanut butter.  You do you.

Definitely add some syrup + nutella.

    I LOVE these! I totally think that pancakes are one of the essential items that you need to know how to cook well, and it looks like you are the master! Enjoy the rest of your summer!
