No-bake Brookies (aka brownie + cookie)

I’m excited about this one.

But I tend to be excited about all recipes I share.  AND I’m super duper excited about that onesie I’m wearing in the above photo.  It’s from Anthro and I got it on sale for $50.  It is one of the most comfortable things I’ve ever owned.

True.  Go buy it.  You will be so comfortable.

If you’ve read this blog for a hot sec, then you know I’ve been loving chocolate covered almonds lately.  They’ve been my favorite snack/favorite something sweet to end a meal with.  But lately they have been losing their luster a bit (as food does when you have it all the time).  So I’ve been searching for another food to get excited about to fill snack time with.  And now here we are with these no-bake brookies.  I’m happy to say they are made with some of the best foods…chocolate & peanut butter.  YASSSSSSSS.

And not only do these have chocolate and peanut butter, but they also have flaxseed.  Yay for fiber and healthy digestion.  And they have oats.  And they have Justin’s Chocolate Hazelnut Butter (my fav).  And I don’t think I should say, “and”, anymore.

So you mix up a peanut butter oatmeal cookie dough and then you mix up a brownie oatmeal dough.

 Then you smoosh the two together to make the most satisfying snack.

So steps you should take in the next couple of days.  Step 1) Buy all the ingredients for this recipe (i imagine you totally already have everything because these are pretty simple).  Step 2) Make these.  Step 3) Enjoy!

No-bake Brookies (aka brownie + cookie)

Yield: a bakers dozen

Total Time: 15 minutes + 1 hour chill time

Ingredients:

peanut butter cookie side
2/3 cup rolled oats
1/4 cup + 1 tbsp peanut butter
2 tbsp ground flaxseed
2 tbsp maple syrup
1-2 tbsp milk (may not need)
chocolate chips

brownie side
2/3 cup rolled oats
1/4 cup Justin's Chocolate Hazelnut Butter
2 tbsp ground flaxseed
2 tbsp maple syrup
1 tbsp cocoa powder
1-2 tbsp milk (may not need)

Directions:

Get out two bowls.  In one bowl, mix together all ingredients for your peanut butter cookie side.  In the other bowl, mix together all ingredients for the brownie side.  Add JUST enough milk to each 'dough' to allow the 'dough' to stick together.  Roll each side into 13 balls.  Then press one peanut butter cookie ball and one brownie ball together to form your brookie! Allow to sit for at least one hour before eating.  Store in the fridge.

  6. Just made the peanut butter oatmeal side and it was amazing! I added a scoop of cinnamon to my dough and it made all the difference! These are just what I need when a crave something sweet, chewy and fast in my tiny college dorm! Thanks for sharing
