Iced Coffee Oatmeal Cookies
I ate these for breakfast with eggs and a latte and it has been one of my favorite breakfasts lately.
Because they are so oatmeal-filled, the old-fashioned oats stay a bit crunchy and the cookies are a bit crumbly. But the cookies themselves are NOT crunchy. I hope that makes sense. I would not post a crunchy cookie. I’m team chewy, soft cookie ALL DA WAY. But you should know this about me already.
Sooooo one of my most popular blog recipes is my vegan oatmeal cookies. This recipe is based on that one.
side convo: I’m IN LOVE with my dress in the above photo. It’s my grandma’s and she gave it to me. I promised my mom I would wear it once before I cut off the sleeves it had. But the sleeves had this elastic ring that went around my arm and it was way too small for my arms. So I cut off the sleeves and now it’s my favorite dress. I just hope cutting off the sleeves doesn’t make the entire dress fall apart at some point. To be continued…
Okay these cookies. Oatmeal cookies are great, but then you add coffee into the mix and it’s gonna be your new favorite cookie (that is if you like oatmeal and coffee and unicorns…)
Iced Coffee Oatmeal Cookies
Yield: 8 cookies
Prep Time: 10 minutes
Cook Time: 10 minutes
Total Time: 20 minutes
Ingredients:
cookies
1 1/2 cup old-fashioned oats
1 cup oat flour, spooned into measuring cup
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup honey
3 tablespoons unsweetened applesauce
3 tablespoons coconut oil, softened
coffee icing
1 cup powdered sugar
2 tablespoons hot coffee (I used hot coffee so it'd melt the butter)
2 teaspoons butter
Directions:
Preheat oven to 350ºF. In a bowl combine all ingredients. Roll into 8 cookie and slightly press flat (they won't spread, but you want them to be thick cookies so they don't get dry!). Bake 10 minutes. The bottom of the cookies should be just turning golden brown...don't over cook.
