screenshots to meals.

If you are like me, you screenshot meals you wanna make ALL THE TIME…and then never make them.  So when thinking about what we were going to eat this week, I decided to scroll back through my screenshots for some meal inspiration.

The first screenshot (from March 1st LOL!) was a salmon salad from foodiecrush.  To my salad I added seared salmon, raspberries, pistachios, goat cheese, dried cranberries and a olive oil+red wine vinegar+honey dressing.  Paired with a lime la croix.  This dinner was too low carb for me, so I added a pumpkin oatmeal muffin with snickerdoodle streusel

My next screenshot was of burrito bowls from Cookie and Kate found via How Sweet Eats.  Andrew prepped this one for us and had dinner waiting when I got home.  Roasted sweet potatoes, black beans, sharp cheddar cheese, avocado.

The other screenshot was a lentil dish found via The Everygirl.  Mine was roasted asparagus + lentils + goat cheese.

The last meal I screenshot-ed and prepped this week was found via Earthbound Farm.  Eggs + white rice + cilantro + edamame + stir-fry sauce.

  2. I am definitely guilty of having many screen shots of foodie pics that I intend to recreate, but never actually do – love this idea to change up my meals. Thanks for the inspiration!

  3. Late comment – but this made me laugh so hard. My personal Evernote account is filled (FILLED) with recipes that I’d like to make eventually someday but never get around to. Then again, it serves as an index of sorts when I AM searching for a recipe (e.g., a few months ago I searched for “peanut butter” energy balls bites or something like that, and had 7 recipes to choose from!). For most things, I kind of mush a bunch of recipes together into my own approach, which works for me!

  4. Pepperplate is how I plan my meals. The app also has a browser version so I can paste a new recipe into it whether I’m on my phone or computer. Then all I have to do is search one of my categories (gee, I have extra *chicken* to cook this week…) and it sorts my choices for me. I love Pepperplate, my family would probably starve without it. (Or eat a lot of tacos…)
