Sheet Pan Dinner: Asparagus Bruschetta Parmesan Chicken with Roasted Fingerling Potatoes

How are you? Tell me about your life.  Have you tried sheet pan dinners? This was my first time doing it.  If you have done the sheet pan dinner thing, tell me what you’ve made! I want your ideas!

I’m a fan of the sheet pan dinner thingamajigs because I’d much rather watch The Mindy Project than have to spend time doing dishes.  Sheet pan dinner = 1 dirty dish.  Okay. Wait.  Not true.  For this one you will also need a shallow bowl to whisk an egg.  So 2 dirty dishes.  And then the plates you eat on.  So 4 dirty dishes is there are two of you.  BUT if you live alone then you will only have 3 dirty dishes..YOU WIN!

I liked this recipe a bunch because you coat the chicken in parmesan + breadcrumbs right on the sheet pan.  No need to dirty another dish because everything is going straight into the oven and any raw-chicken-ness will disappear.  Beautiful. 

Once the chicken is coated, you simply scoop any remaining parmesan + breadcrumbs off the baking sheet.

I’m pumped to make a zillion more sheet pan dinners.  They are like muffins.  Ya know?  You probably don’t know what I mean because I have trouble making since (haha.  got you.  I know it’s ‘sense.’)  I mean sheet pan dinners are like muffins because there are so many different varieties I can think of.  I want my next sheet pan dish to have salmon on it.  Man, I ate so much seafood this past weekend at FNCE.  LOVED it.  Hard to beat eating seafood when you’re by the ocean.

Sheet Pan Dinner: Asparagus Bruschetta Parmesan Chicken with Roasted Fingerling Potatoes

Yield: makes enough for 4

Prep Time: 10 minutes

Cook Time: 40 minutes

Total Time: 50 minutes

Ingredients:

bruschetta parmesan chicken
4 thin chicken breasts
1 1/2 cup parmesan cheese
1 cup panko

asparagus bruschetta
1 1/2 cups cherry tomatoes, sliced in half
top 1/3 of an asparagus bunch
1/3 cup fresh basil

crispy, roasted potatoes
1 1/2 lbs fingerling potatoes
olive oil
salt/pepper

Directions:

Preheat oven to 350ºF.  Grease half of your sheet pan with olive oil.  On the other side of the sheet pan, put a pile of parmesan and panko.  In a shallow bowl, whisk an egg.  Dip each piece of chicken into the whisked egg and then press into the panko and parmesan.  Place each on the greased side of the sheet pan.  Add cherry tomatoes to the top of the chicken.

Now for the other side of the sheet pan...

Slice fingerling potatoes in half lengthwise.  Then toss (on the other side of your baking sheet) with olive oil, salt and pepper.  Place all potatoes with cut side down.  Then bake for 25-30 minutes.  After 15 minutes of baking, add asparagus tops to chicken.  And return to oven until the chicken is cooked through (internal temp of 165ºF).  Place cooked chicken on a plate and cover.  Flip your potatoes and cook for 20 more minutes until crisp.  Top chicken with basil and SERVE!

  2. I learned the art of the sheet pan dinner from my mama and I’m still loving them now :) I can’t wait to try this one out for my fiance this week. Serve that man anything with chicken and potatoes and he is a happy boy – fiance points = winning!

  3. Gurl, I got a recipe for you!! Place a chicken breast, frozen broccoli florets, a few slices of onion, drizzle of ranch, cheese, s&p, and paprika on a piece of foil and fold into a packet. Repeat with however many chicken breast you have. Then bake in the oven at 375 for 30-40 minutes (until chicken is cooked). Super easy and delicious!!
