I’m deeming these guys the ultimate holiday sweet and savory combo.  The cornbread flavor + herby cheese brings the savory and the fresh cranberries bring the sweet.  And because I know you are wondering…yes, these lil’ golden muffins do pair excellently with eggs and a latte for breakfast.

Have you done the Friendsgiving thing before? I actually haven’t! But I love the idea.  I like my friends and I like Thanksgiving…so the whole idea seems fab.

And obviously, the ultimate way to be the hostess with the mostest is to serve your guests cranberries because cranberries contain nutrients called PACs (proanythocyanidins) that play a role in helping to maintain urinary tract health.  Nobody wants a UTI during the holidays…soooo cranberry-ify your life a bit.  In addition to being perfect for holiday food and drinks, cranberries can also make your house smell like a winter wonderland.  Or you can be like Martha and make a DIY holiday garland.

I would love to know the best Thanksgiving side you have ever had before.  I like the traditional Thanksgiving sides, but I think throwing a Friendsgiving would be the perfect time to try out some non-traditional recipes.  Perhaps like these here muffins with a cheesy core.  I wish more things in life came with a cheesy core.

For the cheesy core, all you do is make a mini cheese ball and press it into the batter.  Cover with more batter and voila! Cheesy core.  It’s great.  You must try.

So moral of the story is: if you like cheese and cornbread, you will like these.  ENJOY!

savory cranberry cornbread muffins with a cheesy herb core.

Yield: a dozen muffins

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Ingredients:

dry ingredients
1 cup cornmeal
1/2 cup whole wheat flour
1/2 cup all-purpose flour
1/4 cup brown sugar, packed
2 teaspoons baking powder
1/2 teaspoon sea salt
1/4 teaspoon baking soda
3/4 cup cranberries, roughly chopped

wet ingredients 
1 cup + 2 tbsp milk (I used 2%)
1 egg
1/2 cup greek yogurt (I used 2%)
1/4 cup coconut oil, melted

cheesy core
1 cup finely grated cheese (i used a mix of parmesan + sharp white cheddar)
1/2 tbsp herbs de provence

Directions:

Preheat oven to 350ºF.  First, make your cheesy core.  In a bowl, combine finely grated cheese and herbs de provence.   Grab a bit of the cheese + herbs and roll into a tight ball, repeat until you have 12 cheese balls.  

In a separate bowl, combine all dry ingredients.  Make a well in the center and add in all wet ingredients.  Line a muffin tin with paper liners.  Fill half way up with muffin batter.  Add a herby cheese ball in the center.  Cover with the remaining muffin batter.  Bake for 15-20 minutes, or until tops are set and muffins feel firm when pressed.

Cool for 10 minutes before serving (mainly so the muffin liner comes off the muffin easily).

    We have so much cornbread and cheese leftover from our wedding that I plan to just combine the two plus cranberries. I hadn’t thought to add cranberries, but it’s the month of Thanksgiving, so all the more reason to do so!
