Day in the life!

Yesterday was my first day seeing clients in-person in the new office! YAY!

I slept in until 8am. Glorious. I’ve been taking me sleep very serious lately and will probably do a post on this in the future.  

Then I got up. Put our dinner for the night in the crockpot. Then made a breakfast –> cinnamon swirl bread french toasted and topped with maple syrup + vanilla greek yogurt and fruit.

I got ready and headed into the office at 9am.

Saw my first client. Had a snack —> cottage cheese + crunchy crackers.

Saw some more clients. Thought I had time for lunch before another client, but didn’t. So had a cookie snack to hold me over until lunch.

After my client…LUNCH! This lunch was especially tasty and I’ll be making it again.  It was some of a leftover Dole BBQ Ranch Salad kit that I mixed with farro + walnuts + hemp seeds. So good.

After lunch I had two more clients. And another snack.

At 5:30 I headed home to get ready for dinner because our good friends, Donika & Ethan, were coming over.  While I cleaned the house a bit and got dinner finished, Andrew worked on helping me edit this video.

For dinner I cooked tortilla soup in the crock pot all day. It’s the easiest recipe ever and makes such a delicious dinner.  This is basically the recipe I used, but for this one I also added 4 cups chicken broth + 1 1/2 Tbsp cumin + 1 1/2 Tbsp garlic powder + 1 Tbsp onion powder + 2 tsp smoked paprika. Yum.

I don’t think crockpots are the most appetizing way to serve food, so I scooped the soup out of the crock pot and into my pretty Le Creuset. After Maggie and my pink chair, my green Le Creuset pot is my third most favorite thing I’ve ever bought.


We made dinner and our friends brought over dessert and their perfect pup, Cooper! Fingers crossed we get to babysit Cooper this summer while they’re in Europe. He’s the sweetest and while he’s a playful puppy and Maggie is getting into her angsty teenage years, they still get along.

For dessert they brought homemade baklava (like Donika’s aunt make the phyllo dough from scratch! I’m like, “how do you even roll something out that thin?!”) and peanut butter cookies.

We spent the night hanging out. And then I put together this post.

Bed = 11pm.

  1. Cinnamon swirl French toast needs to be in my future! That looks great.
    Also, my life is much better when I am serious about bed time. I am working on being more consistent about it because me the next day is very grateful!

  4. Wahoo!  Your first client day sounds like a huge success :) congratulations!. I love, love, love, my Le creuset.  It gets used multiple times a week.  Yes, how do you roll something to paper thinness, I will never understand.  That being said, i sure am glad someone does haha.
