3 favorites from Jackson Hole, WY

Hi guys! 

Before we get into today’s post, I wanted to mention that if you’ve been thinking about starting a blog, now is a fabulous time.  Bluehost is offering a sale –> $2.95/mo for 36 months on their Basic Plan (<–affiliate link).  That’s 60% off their typical rate.  Awhile back I shared a post on how to start a blog fast.  Blogging has brought me a platform to advocate for true health (away from restriction, bingeing, food rules, and overexercising) and I’m so grateful to the blogging world for that.  If blogging is something you’re interested in, I highly recommend starting a blog.

On to some favorite vacation things.  I loved Jackson Hole (more than I even expected to!) and appreciate all who sent recommendations for restaurants to eat at + hikes to go on.  Here are my 3 favorite things we did…

1. Persephone Bakery

I loved this bakery.  I could’ve happily eaten here everyday. 


One day we went for breakfast.  I got scrambled eggs that were perfectly cooked + almond croissant + a decaf vanilla latte.

Andrew is a bread pudding lover, so he got the bread pudding french toast.

The morning we went was chilly and Persephone had blankets for anyone to use…fabulous.

Another day we went for lunch.

I got a baguette sandwich made with truffle butter + prosciutto + arugula + Italian peppers.  Served with homemade chips and another vanilla latte…that they definitely didn’t make decaf because I was a jittery mess after lol.

I loved the atmosphere at the bakery.  Just look…


They also had this little nook / shelf area where they would place your drink when it was ready and they’d call out your name.  Look at that little teapot, so cute! 

2. Jenny Lake Hike + Boat Ride

I only did one hike on the trip.  My knees are still extremely painful.  Pain-wise…some days are better than others.  Mentally…it sucks some days more than others.  I’m finding peace with knowing God is teaching me something through this.  I’m still doing my PT exercises and just ordered a heated knee brace for the evenings.  Heat seems to help them a lot.

Jenny Lake was beautiful and my favorite hike I’ve ever been on, mainly because it involved a boat ride at the end.  The hike was mid morning and even though I wasn’t hungry I knew lunch would be later than normal, so I got some M&M’s for a snack from the shop near the trailhead.

Then we hiked!

And the hike ended at a waterfall…

Then we took a boat back to our car.

After Jenny Lake we went and ate nachos.  Andrew and I split a half order and the waiter made the annoying comment of, “there is no way you two could finish even the half order.”  Umm okay, jerk…I’m allowed to listen to my hunger and fullness cues.  We finished them…and both could’ve eaten more.

3. Nice public bathrooms.

This one is ridiculous, but my most frequently said phrase on the trip was, “i’m gonna run to the bathroom real quick!” Pregnancy has me peeing all the time.  I’ve found if I drink a 16oz bottle of water I end up having to pee 15 minutes later every 30 minutes for 1 1/2 hours…it’s like clockwork and is hilarious.

So with all the peeing, the nice public bathrooms in town were welcomed with open arms!

Those were some of my favorite trip happenings.  I also got in a lot of watercoloring, which was fabulous.  I’ll be starting a new series with watercoloring soon :)

  5. I think Jackson Hole is now on my list of vacations to take! It looks beautiful. A boat ride at the end of a hike is genius!! LOVE bump pics too!!

  7. That café is so so adorable, I love that you included bathrooms, and your bump is cute!! Ohmygosh those photos are breathtaking. So vibrant and gorgeous. That waiter was so rude, though! It’s not their job to tell you what and how much to eat. Can’t wait to read about your watercolor series!

  9. Loving the BUMP photos! This looks like such a fun trip. Wyoming is way on the other side for me, but I thought if I ever go back to CO again, I’m gonna try to check it out. I was surprised out how close I was the last time I was there.

  11. “okay, jerk” haha. I HATE when waiters/others make comments like that. What a triggering comment for someone who has not developed a positive relationship with food, you just want to slap them.
    What a fun cafe, I would go there just for that! ;) thanks for sharing your trip!
    Also, just started back up posting on my blog and doing more on intuitive eating since I have been working on it for awhile and starting to have the IE discussion with my counseling clients. Looking forward to learning more here and helping others through my blog as well!

  12. So I usually HATE when people jump on with advice…pregnant women are always inundated with ADVICE!
    So—
    Please take the following with a grain of salt! :)
    I had the most painful knees and hip joints. It started before pregnancy but got much worse when I got pregnant. My naturopath got me started taking 2-4 TBS of collagen hydrolysate (I used Great Lakes brand) every day. I mixed it into soup or my coffee.
    I had dramatic improvement in my joints within 2 weeks. It was a total game changer. I’ve kept it up after delivering…my hair and nails have never looked better, also!
    (It also (supposedly) helps prevent varicose veins and hemorrhoids by providing high-bioavailable protein which strengthens cellular walls…)
    Please forgive me for being that person. But maybe this will help you or someone else as much as it helped me!!

  15. Jackson hole looks amazing! I’m glad you had such a great time!

    I recently found your blog after I had my son back in March. I’d never really given into my pregnancy cravings but have since given in more since I started nursing. I’ve struggled with my ed since I was 14 and I’ve just been trying to find help through your blogs. It’s really hard for me to just listen to my body. I do eat what I want sometimes but not nearly as much as I’d like. Sometimes I just want to eat two or three bagels instead of one but my mind says that’s too much. It just goes on. We can’t afford an ed counselor or a dietician but your blogs feel like a breath of fresh air when I’m feeling trapped in my head.

    All in all, I hope your blogs will help me out of

  17. Whoa I feel like you went from basically no bump to bump all of a sudden (irl I’m sure it didn’t feel like that lol)!!  Eeeeeee sooo excited for you!!!!????

    • lol in the morning the bump is still pretty non existent and I feel like me…except none of my clothes fit haha. Thanks for the excitement, Hannah:)
