weekend.

Saturday morning started with a coconut flour pancake.  While cooking (before I flipped it), instead of graham crackers like that recipe calls for I pressed some granola into the top.  Without some kind of added carbs this pancake only keeps me full for like an hour.  Topped with some nut butters and served with a homemade half-caf vanilla latte.

Saturday morning I ended up replying to some emails I got behind on.  Then Andrew and I headed up to the lake.  We dropped off Maggie at a boarding facility because we had an adventure planned for Sunday that she couldn’t come along on.

She looks a bit nervous in the below photo, but she really is a great car rider and typically doesn’t seem to mind.  She must’ve sensed she was getting left behind! 

We got to the lake around lunch time and had some pasta salad + leftover slider patties.

Then I spent the rest of the afternoon hanging out in the water + snacking on the best cantaloupe and some delicious M&M cookies that our family friends brought.

We had A TON of people up at the lake.  The weekend was with some of our good family friends and it was a chance to get together to celebrate some recent engagements.  The below photo is of all the kids! We were missing Layne + Marco :/

For dinner my dad cooked salmon on the grill.  My dad made some marinade that had dill in it and it was SO good on the salmon.

Dinner = that salmon + loaded baked potatoes + roasted veggies.

Dessert was ice cream + peach cobbler that was made on the grill.

Then bed.  Because I’m pregnant my parents let Andrew and I sleep in their master bedroom while everyone else (all 15 of them) crammed into the house elsewhere.  We slept fabulously, which I was super grateful for…but it felt weird taking over their bedroom when they were there! 

Sunday morning started with my Aunt Ali’s famous Swedish pancakes (their thickness is between a crepe and a pancake).  We filled ’em with fruit and topped with maple syrup.  We had a long drive ahead of us that morning and I wanted to be full, so I went back for seconds.

Then Andrew and I were off! We decided to go on an overnight babymoon to someplace I’ve always wanted to visit.  More on that later this week!

  1. That sounds like a perfect weekend! I love the view from the lake, and I’ll have to make use of that cobbler recipe once peach season rolls around here :)
    This weekend we celebrated the marriage of my fiance’s sister! And now it’s only four weeks until we get married too. It was nice to catch up with all of the family before our big day.

  2. You always have food combos that I’d never ever think of but sound so good – like granola in pancakes! Yum.

  5. Such a good idea to mix granola into pancakes! We had some friends over for dinner this weekend and made salmon with dill and it was amazing… I am super into putting dill on anything and everything lately. This week I am looking forward to a road trip up to Pittsburgh to visit family! Hope you enjoyed the babymoon :)

  8. Your weekend sounds wonderful! Time with family is so great! This weekend my husband took the LSAT and then we had a Birthday/going away party with a bunch of friends! I also got to meet my 3 day-old niece!
