Best Breakfast Biscuits (made into the best breakfast sandwiches!)

You guys.  The waiting game of “when will baby arrive” is not my favorite thing.

This is my very last week seeing clients and I only have a few.  I’ve been weaning down on the client number I see each week throughout the month of October.  It’s been hard to decide when to stop seeing client, but I don’t want anyone to feel like I just dropped them all of the sudden when baby comes so I wanted to give myself enough time.  I’m completely stopping client work this Friday at 38 weeks, which (hopefully) will be good timing.  It’ll be good timing as long as baby doesn’t come before this Friday.

So the waiting game.  I’m sure I need to reframe my thinking from calling this season “waiting game” to something else.  I was talking to a friend yesterday (hey, Rachel!).  She has a sweet baby boy and mentioned that she would love to go back to this season of waiting because she knows how wonderful and epic the adrenaline rush is that I’m about to get when Raspberry chooses to make her debut.  So that was really helpful for me to think about. 

It’s like vacation anticipation…except you don’t know when vacation is going to start.  I know motherhood is going to be one of the most exciting adventures of all time…it’d just be super nice if we could put a start date on it lol.  Perhaps the start date has already past.  I guess the patience I’m having to call on now and the uncertainty I’m feeling is part of the motherhood journey.  I’m just so excited to have a little mini me to do this next season of life with.  There are so many things I’m excited to do with her and I have a list in my phone of phrases I can’t wait to say to her.  Like really cheesy things like, “i’m gonna dress you up in my love” and such. 

This time is just interesting because everything that could be early labor (backaches, period-like cramps, etc.) could also be a sign that nothing is starting.  Waiting for her to arrive has me anxious excited (for the majority of the time) and anxious terrified (if I’m sleep deprived / having a less than ideal back pain day).

One wonderful thing about right now is that Houston actually feels like fall this week.  Or at least it does in the morning until it heat up to 85F+.  But in the mornings it is so nice.  The cooler weather does a lot for my mood.  Something not good for my mood…I know yesterday I said, “bring on the sleep deprivation,” but then Sunday night I couldn’t sleep and yesterday I was so emotional likely because of it.  For instance, my doctor told me I was GBS positive at our appointment yesterday, which isn’t a big deal and I think that’s great it is something we can test for but my brain felt the need to cry about it.  Everything is so overwhelming when you’re sleep deprivation.  So while wonderful weather is good for my mood, sleep deprivation isn’t (says everyone for all time lol) and I take back the statement of, “bring on the sleep deprivation.” 

So that’s where I’m at.  I have no transition into this recipe lol.  So we’re just gonna go for it…

I made these breakfast biscuits because my favorite place to get breakfast biscuits in Houston has started overcooking their biscuits (IMO)…so clearly I needed to have a good go-to breakfast biscuit recipe for when a biscuit craving strikes.

The biscuits are drop biscuits, which is a million times easier than having to cut biscuits into a shape.  You just drop them off of the spoon onto a baking sheet and done.  They are wonderful and fluffy and I leave ’em a little bit doughy in the center.  I think would be really great with rosemary or oregano added to them for the holiday season.

Best Breakfast Biscuits

Yield: 6 biscuits!

Total Time: 22 minutes for biscuits / 30 minutes for biscuit sandwiches

Ingredients:

for biscuits
2 cups all-purpose flour
1 tbsp baking powder
1 tbsp sugar 
1/2 teaspoon salt
½ cup unsalted butter, melted
1 cup milk

for breakfast sandwiches
bacon
scrambled or fried eggs
cheese

Directions:

Preheat oven to 450F.  In a bowl, combine flour, baking powder, sugar and salt.  Mix in butter and milk until a sticky batter forms.  On a greased baking sheet or a silicon mat, take spoonfuls of the dough and drop onto your baking sheet to make 6 biscuits.

Bake for 10 minutes or until the bottoms are golden brown and the tops are just starting to get a golden hue in some areas.

You can make the biscuits into breakfast sandwiches and then freeze in freezer bags for easy breakfast-ing.  Just defrost the breakfast biscuit in the microwave before eating.

I’m off to a church women’s group and then have an afternoon client.  Then tonight we’re watching the World Series. Yay! Andrew and I aren’t really sports people.  But we’re those annoying sports fans who are like “yay, sports!” when teams are doing well.
