oatmeal muffins

This week I had a craving for oatmeal muffins, which is funny because I don’t think I’ve ever eaten an oatmeal muffin before.

I topped them with a chai spice dusting, but I didn’t mention that in the title because I’ve been making so many chai things lately that I didn’t want you to think this was becoming a intuitive eating + ED recovery + motherhood blog that features a ton of chai spice recipes….even tho that is how the blog has been looking lately.  Perhaps summer will bring some different flavor cravings into my life!

But until then…here are these oatmeal muffins with an optional chai topping.  Hope you enjoy! Have a good weekend, guys! 

oatmeal muffins

Yield: makes 9 muffins

Ingredients:

muffins
1 cup milk
1 large egg
1/2 cup unsalted butter, melted and cooled

1 cup old-fashioned rolled oats
1/2 cup brown sugar, firmly packed
1 cup all-purpose flour
1 teaspoon cinnamon
1/2 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda

chai topping (optional)
2 teaspoons sugar
1/2 teaspoon cinnamon
1/8 teaspoon cloves
1/8 teaspoon nutmeg
1/8 teaspoon cardamom
1/8 teaspoon ginger

Directions:

Preheat oven to 400ºF.  In a bowl, combine wet ingredients (first 3 ingredients) and then add in all remaining ingredients.  Stir until just combined.  Divide between 9 greased muffin tins.  If adding chai topping, combine all spices + sugar in a small bowl.  Spoon over each muffin top.  Bake for 15-20 minutes, or until a toothpick comes out clean.

  8. Haha, I have the same feeling sometimes of craving something I’ve never even eaten before! Once I get something in my head, I WANT it! LOL These look super yum…I agree with everyone else – no complaints about all the chai!

  9. Perfect timing! I just ate a similar looking muffin at a bakery and wanted to find a recipe. I’m going to try to make them egg and milk free- – my daughter is allergic to eggs and my son is allergic to milk. It makes baking a challenge!

  11. I’m another vote for readers who love your recipe posts! :) made these with the assistance of my 2 year old this morning (immediately after reading it, that’s how good they sounded!). We subbed coconut oil as we’re running low on butter. We made 8 smallish normal muffins and 2 dozen mini muffins for toddler snackage this week. They’re delicious!! Yum!

  13. I just made these muffins. Decided to use my own crump topping of flour, brown sugar, cinnamon, oatmeal and melted butter. Even thought it’s 10:30 pm I had to try them. Loved your recipe.

  14. I’ve never had oatmeal muffins before either, but as soon as I read this I was craving them too! I made them today and they’re so good! I think they’d be so good with scrambled eggs and bacon for breaky… Or spread with nutella. OR STUFFED WITH NUTELLA! The possibilities are endless. Thanks so much, Kylie!
