The meal of our summer.

I’ve deemed this our family’s meal for summer! It’s all made on the grill and cooks up in no time when Andrew and I tag team it.

I prep the burgers and zucchini.  For the zucchini, I just toss the zucchini strips in olive oil + salt/pepper + garlic powder.  For the burgers, I just sprinkle them with salt/pepper.

Then Andrew grills both until cooked through.  Throw on some perfect pickles, cheese, ketchup/mayo/mustard and you’re good to go!

I’ve told Andrew that we’re gonna eat this meal weekly until we get tired of it haha.  Next time we should add in some ice cold watermelon.

  1. I don’t really have a go-to meal of summer other than using all the farmers market produce I pick up in a creative way.

    And mayo, mustard, ketchup on burgers for the win!!

  2. Mmm, burgers! They’re sadly an aversion for me righ now (33 weeks and counting!!). However, we do have an epic go-to grill meal that we call “grill packs.”

    Per pack:
    -1/2 corn on the cob
    -1 cut sausage
    -lots of shrimp (maybe 8-10 a pack)
    -a bunch of small red potatoes

    Add lots of lemon, some butter, and Old Bay (we live in MD, so LOTS of this is a necessity, haha). Wrap it all up in foil so it makes a little packet and grill for like 10 mins a side. SO good on a hot summer night and comes together pretty quickly!

      And funny to hear burgers are an aversion for you because burgers were one thing that always sounded good to me in pregnancy. A few times I ended up having a burger for a snack because HUNGER!

    • Mmmm. Old Bay. It took some getting used to, but I love it now.

      I’m just surprised that shrimp isn’t crab. ;)

  3. We bought Bubbies Pickles yesterday in our weekly grocery haul. My boyfriend was skeptical after seeing their price tag, but OMG you weren’t lying! Best pickles ever. Worth every penny! We ate a few with basically the same meal of burgers and grilled veggies last night. Thanks for the introduction! :)

  4. Mmm yes ice cold watermelon! ? Burgers on the grill are definitely a summer favorite as well as grilled chicken fajitas!  Grill up the chicken (HEB has a GREAT fajita meat in the meat section) and grill up some peppers, onions, and cook some beans; add in yummy toppings like guacamole/avocado, pico de Gallo, salsa, cheese…and I love the Heb fresh tortillas—create your fajita and voila!  Easy + delicious dinner!

  6. Yumm… It’s winter here in Australia now, but I wouldn’t say no to an outdoor bbq’d burger and a bonfire to warm up!

    • It’s so hard for me to wrap my head around it being winter in Australia. I know that’s how the world works lol but I need to travel and experience it at some point!

  7. We love to throw ahi on the grill and then make tacos and salads, or as a main with a dipping sauce. I’ve also been making the salmon cakes from your website. Love them warm for dinner with grilled potatoes/veggies, and leftover for lunch on a sandwich with chips or watermelon on the side. I go through a mini watermelon a week during the summer – so refreshing!

  8. Grilled zucchini is so good! I’m still trying to find a good summer meal for us. For some reason I always find warm weather foods difficult as in I never know what to make! We did grilled corn on the cob last week so I’m sure that’ll be in our rotation for sure.
