Growing up my mom would always say the hardest part of cooking was to remember to thaw the meat. There are many nights I agree and that is one of the reasons I appreciate the convenience of a ready-to-eat protein source. While many times vegan/vegetarian options are ready-to-eat, only eating non-animal protein sources day after day does not leave me satisfied. I’ve always kept StarKist’s Tuna Creations packs on hand for easy “tear and pair” style recipe such as this one.

For this recipe, you simply make a tuna salad and pair it with chips and fruit. Over the years I’ve made so many variations of this recipe and you can really throw in any finely chopped fruit or veggie you have in your fridge. The lemon pepper flavor of StarKist Tuna Creations brings a tangy, citrus flavor to the meal that I welcome with open arms (and I went ahead and added relish since I love a strong tangy flavor! I’ve also added capers in the past and I love it!).

This meal leaves me satisfied thanks to the variety of textures and most of the food groups being included. We’ve got a great source of protein from the tuna, a great source of fat from the mayo, a great source of fiber from the fruits and vegetables, and a great source of carbs from the chips.

Super Easy Lunch.

Yield: serves 1 (easily doubled, tripled)

Ingredients:

1, 4.5oz packet StarKist Tuna Creations Lemon Pepper
any fruit or veggies you have in the fridge, finely chopped (examples: radishes, grapes, apples, carrots, celery, bell pepper, pickles)
1-2 tbsp chopped walnuts
1-2 tbsp mayo
2 tsp mustard
dill (to taste)

Directions:

In a bowl, combine all ingredients. Serve with chips + fruit.
