White Chocolate Pumpkin Spice Snickerdoodles

Welcome to recipe number two of holiday baking week! Yesterday I shared the first recipe of the bunch, which was our family cherry pie. Today we’re moving on to cookies!

These cookies are great. They’re based off this snickerdoodle recipe from Chelsea’s Messy Apron, with only some minor adjustments.

I mentioned these cookies a couple times on Instagram and I kept getting questions about what were the recipe changes I made, so I wanted to get the recipe written down on the blog. It’s such a great holiday recipe that I think will likely become a staple in our holiday baking line-up, since everyone in our house thinks they’re super tasty.

They’re like your classic snickerdoodle, but the cinnamon is replaced with pumpkin pie spice and white chocolate is added in (also, if you’ve never made sugar cookies with white chocolate added in, that is worth a try, because it’s awesome).

White Chocolate Pumpkin Spice Snickerdoodles

Yield: 24 cookies

Prep Time: 15 minutes

Cook Time: 10 minutes

Total Time: 25 minutes

Ingredients:

16 tbsp unsalted butter, softened
2/3 cup white sugar
2/3 cup light brown sugar, packed
1 whole egg
1 egg yolk
1/2 tbsp pure vanilla extract
2 and 3/4 cup all-purpose white flour
1 and 1/2 tsp cream of tartar
1/2 tsp salt
1 tsp baking soda
1 tsp pumpkin pie spice
1 cup white chocolate chips

pumpkin pie spice coating
1/4 cup white sugar
1 tbsp pumpkin pie spice

Directions:

Preheat oven to 325ºF. In the bowl of an electric mixer, cream together butter, white sugar and brown sugar until fluffy. Add in egg, egg yolk and vanilla. Beat until incorporated and then a minute more for fluffiness sake.

Add in flour, cream of tartar, salt, baking soda and pumpkin pie spice. Mix until the dough forms. Fold in white chocolate chips.

In a bowl, mix together the two ingredients for your pumpkin pie spice coating. Roll dough into balls and coat in the pumpkin pie spice coating by tossing the dough balls in the coating. Place cookies on a baking sheet and bake for 10-12 minutes. Enjoy!
