What are you doing for Easter? (+ our plans & a recipe for your leftover ham)

With Covid-19 limiting our Easter celebrations, this Easter is looking a bit different than previous Easters for us. I imagine that’s true for you as well?
Our plan is to hang around the house, attend virtual church, eat ham as our main course (like we typically do on Easter), make some delicious side dishes, eat hummingbird cake for dessert, set up an Easter egg hunt in the backyard for Jo, and have a visit from the Easter bunny early in the morning. Last year I bought this golden egg and I save it from year to year to stuff some Easter bunny goodies inside. Jojo has been loving Peppa Pig, painting and chocolate, so this year I filled the egg with those things.
I also got Jojo a new Easter dress several weeks ago, so I plan on dressing her and Ella up and getting some sweet photos of them and our family. I asked Jojo if I could take a photo of her holding up her Easter dress and she was up for it…
…but then she hollered, “your turn!” So she took this photo of me holding her dress haha.
Since we aren’t going to be surrounded by family this Easter, we’re going to have more leftover ham than usual. It feels nice to do something that is familiar and a tradition in the midst of the craziness that is life right now. That said, I thought it could be helpful to share a recipe to use your leftover ham for, since you may be in the same boat!
This recipe uses leftover ham, green onions and sharp cheddar cheese to create the ultimate savory scone. I’ve long been a fan of savory scones, especially when you pair them with (my personal go-to) an iced vanilla latte. The sweet + the savory. It’s great.
And if you have kids and you’re at home without childcare help, I imagine your food preparation will look something similar to mine…

Savory Ham & Cheddar Scones
Yield: makes 6 scones
Prep Time: 15 minutes
Cook Time: 20 minutes
Total Time: 35 minutes
2 cups all-purpose flour
1 tsp baking powder
1/2 tsp salt
¼ tsp baking soda
1/8 tsp black pepper
8 tbsp butter (unsalted), cut into cubes
1 cup leftover ham, chopped into ½-1 inch pieces
2 green onions, sliced into thin rounds
heaping ½ cup grated sharp cheddar cheese
1/3 cup half-and-half
2 large eggs
Preheat oven to 400F. In a bowl, combine flour, baking powder, salt, baking soda, and black pepper. Sprinkle the butter cubes on top and use your fingers to work the butter into the flour mixture until it is crumbly/resembles sand. Add in ham, green onions and cheddar cheese. Toss together.
In a small bowl, whisk together the half-and-half and eggs. Pour into the center of the dry ingredients and mix until everything is incorporated together. Flour a cutting board. Scoop the sticky dough out onto the cutting board and pat (use flour as needed to decrease stickiness) into a 8” disk. Cut into 6 scones. Place scones (at least a 1/2” apart) on a baking sheet lined with parchment paper or a silpat. Bake for 20 minutes.
