Chocolate Chip Zucchini Oatmeal Muffins

These muffins are basically baked oatmeal in muffin form. If you’re looking for a light and fluffy muffin, this is not your recipe.

With kids I appreciate recipes that I can make ahead and are all ready to go come morning time. My girl’s school serves them breakfast on the days of the week they go there, which is awesome and I love not have to think about making them a meal on those mornings! But when I do need to think about making them a breakfast, these muffins have been a hit.

With kids I prefer these muffins over making a bowl of oatmeal because they’re *slightly* less messy, you don’t have to wait for them to cool down in the morning (if you make them ahead of time), and they are grab-able (rather than them needing utensils).

For me, I like these oatmeal muffins because they’re tasty and they make a quick and easy breakfast or lunch that I can eat sitting at the table or grab on the way out the door.

Chocolate Chip Zucchini Oatmeal Muffins

Yield: a dozen oatmeal muffins

Prep Time: 10 minutes

Cook Time: 20 minutes

Total Time: 30 minutes

Ingredients:

dry ingredients
3 cups old-fashioned oats
1 cup shredded zucchini (~1 medium zucchini)
1/2 cup mini chocolate chips
1 tsp baking powder
1 tsp ground cinnamon
pinch salt

wet ingredients
3/4 cup milk
1/2 cup unsweetened applesauce
1/4 cup vanilla creamer (full fat, full sugar)
3 tablespoons unsalted butter, melted
2 large eggs

Directions:

Preheat your oven to 350ºF.

First, remove the liquid from your grated zucchini. Take a paper towel or kitchen towel and place your grated zucchini in it. Over the sink, squeeze the grated zucchini until some of the water is removed. 

Now, in a bowl combine all your dry ingredients. Make a well in the center and add in all your wet ingredients. Mix until everything is incorporated. 

Grease a muffin tin with non-stick spray. Scoop in your muffin batter, filling the muffin tins all the way up to the top. Bake for 22-24 minutes. Eat/serve immediately and store any remaining muffins in the fridge.
