EPIC NO-BAKE pumpkin peanut butter filled oat bars

This recipe is like overnight oats in bar form.

They are really great.  Like I’ve had them every day for breakfast this week. They are like overnight oats because the oats stay super soft and moist.  SUPA MOIST!  And they were inspired by those chewy coconut oat granola bars I made awhile ago.  Loved those.  Love these.

You should know…these are the opposite of a crunchy granola bar. I’m really not a fan of crunchy granola bars. I love granola, but crunchy granola bars are a bit meh in my book.

Side story: I am so sick of watching Bates Motel on Netflix.  Andrew and I will put it on and I’m super creeped out and disgusted the whole time and never wanna watch it again…and then we do watch it again.  I’ve found that I sleep better after watching it if I watch a Mindy Project episode right before bed. LOVING THAT SHOW.

So these bars. I was feeling like I was in SUCH a rut with breakfast. I woke up and was making eggs + toast for breakfast. HOW BORING! I want excitement in my breakfast. So here we are with excitement and imagination and pumpkin and peanut butter!

You make the oatmeal “dough” and then stuff it with a peanut butter-pumpkin-maple syrup mixture that is so fall. And I don’t even like pumpkin that much but this combo is brilliant.

EPIC NO-BAKE pumpkin-peanut butter filled oat bars

Yield: an 8x8" dish worth of bars

Total Time: 15 minutes (+ overnight chill time)

Ingredients:

oat layers
3 cups rolled oats
1/3 cup ground flaxseed
1/4 teaspoon salt
1/3 cup coconut oil, melted
1 medium ripe banana, mashed
1/2 cup honey
1/3 cup milk
1/2 teaspoon vanilla

pumpkin peanut butter filling
1/2 cup crunchy peanut butter
1/3 cup pumpkin puree
1/4 cup maple syrup

Directions:

In a bowl, combine oats, flax and salt.  Make a well in the center and add in coconut oil, banana, honey, milk and vanilla.  Divide the dough in half and press into an 8x8" dish.  In a separate bowl, mix together the 3 ingredients for your pumpkin peanut butter filling.  Spread filling over dough.  Add the remaining oat dough on top of the filling and press flat.  Cover and refrigerate for at least 3 hours.  You're gonna luv these.

  2. I love peanut butter and pumpkin mixed together! Although I’m not usually a fan in of no bake recipe, these look very good!

    • Hmm. If you like museli I think you would like this recipe…but maybe not if you really dislike no-bake recipes. I really hate portobella mushrooms and curry…there is no way those taste good to me…so I understand if no-bake is just not your thing;)

  3. Mmmmmm love that these are hefty on the pumpkin-pb filling! I’m a huge fan of soft and chewy granola bars too so these beauties totally fit the bill. They would also be amazing with nutella instead of PB for the filling too! ;)

  7. I made these and needed to come back and sing its praises. THESE ARE THE BEST BARS EVER!!! Thank you so much for this recipe. I made them exactly as instructed with one exception: I did not have honey nor maple syrup, so I substituted raspberry jelly in equivalent amounts. HOLY HECK were these good! I also went crazy with mixing the pb + pumpkin filling, and it came out wonderfully fluffy. So good. Will definitely make them again with honey/maple syrup once I get more supplies.
