Santa’s Margarita

Deck the halls with margaritas!  Fa la la la laaaa la la la laaaa!!

I’d like to introduce you to this festive cocktail option for your holiday get-togethers. 

After I had lil’ Raspberry I joked that a margarita was going to be my “push present.”  And what would be more perfect for me than a raspberry-infused margarita haha??!

Margaritas have forever been my favorite cocktail, so I thought making a festive red & green margarita with frozen raspberries would be oh-so holiday and oh-so perfect. (oh! and if you prefer a mocktail version of Santa’s Margarita, just check out the notes section of the recipe.)

Since fresh raspberries aren’t available all year round, frozen raspberries, which are frozen at the peak of ripeness, make a fabulous option for helping you (and Santa!) enjoy a raspberry margarita all year-round.  Another fab thing about using frozen raspberries in this recipe is that you don’t have to worry about fresh raspberries getting moldy in the fridge.  You simply pick up a few bags of frozen raspberries from the store, keep ’em in your freezer, and then you’re good to go anytime a craving for this festive margarita hits.

For this recipe you simply dye Santa’s beverage of choice red with raspberry juice that you strain from frozen raspberries.  Then you add in the traditional margarita ingredients, like tequila and triple sec.  To garnish you find anything green that’ll holiday-ify the drink in red & green. 

And you know…why only holiday-ify this drink? Frozen red raspberries can add the color of the holiday (RED!) to many a dish this festive season.  Like perhaps feature frozen raspberries in a dark chocolate tart or an oat crumble.  OHHH! And if you’re making cookies, you could easy dye the icing red with raspberry juice like I did for this unicorn donut recipe.

Okay! Clearly there are a bajillion things you could do with frozen raspberries this holiday season. Excited to hear if you give them a try in this here margarita :)

Santa's Margarita

Yield: makes 2 (small-ish) margaritas for Santa & Mrs. Claus (or you!!)

Total Time: 10 minutes

Ingredients:

1 cup frozen raspberries
3 ounces tequila
2 ounces freshly squeezed lime juice
1 ounce triple sec orange liqueur
2 teaspoons sugar
garnishes: frozen raspberries, lime slice, rosemary or mint
glass rim: extra sugar

Directions:

Take your frozen raspberries and run them under hot water until thawed a bit.  Then place the raspberries into a fine-mesh strainer and use a spoon to press raspberry juice into a bowl. 

Dump out 1/4 cup sugar onto a plate.  Get 2 glasses.  Wet the rim of each glass with water and twirl the rim around in the sugar to coat it.

Into each glass place 1 ounce raspberry juice, 1 1/2 ounce tequila, 1 ounce lime juice, 1/2 ounce triple sec, and 1 teaspoon sugar.  Stir and add ice + garnishes.  ENJOY!

For a non-alcoholic option: Replace tequila and triple sec with sparkling water.
