Cinnamon Raisin Oatmeal Bake

This tastes like a cookie.

Gotta love what the sweetness of a banana can do.

The only bad part about this breakfast…

The 30 minutes it has to spend in the oven.  A long wait…but totally worth it.  Like totally.

Did I tell you that it tastes like a cookie?

Well…it tastes like a cookie.

Cinnamon Raisin Oatmeal Bake

Yield: serves 1

Ingredients:

1/3 cup old fashioned rolled oats
1/2 tsp cinnamon
1/4 tsp baking powder
1/3 cup (vanilla soy milk)
1/4 tsp vanilla
pinch salt
pinch nutmeg
1 Tbsp raisins
1 chia egg (1 Tbsp chia seeds + 2 Tbsp water) (could probably use an egg white instead for a non-vegan option, haven't tried it yet)
1/2 large banana, 'melted' in microwave

toppings
banana slices
raisins

Directions:

Mix together 1 Tbsp chia seeds with 2 Tbsp water.  Let sit 5 minutes, or until gel-like in consistency.

Slice half of a banana length-wise and place in a microwave for 1 minute.  Flipping banana once halfway through.  Banana should be almost completely 'melted' when removed from microwave.

Meanwhile, in a separate bowl, mix together all remaining ingredients.  Add in melted banana and chia egg.  Mix well.  Pour into a small, greased, oven-safe dish.  Bake at 350 degrees for 28-30 minutes.

Immediately top with toppings and serve.

  1. I admit, I had to look up what chia seeds are. Never head of them. I think I’ve seen them in the grocery store. Going to look today so I can give this a try over the weekend along with the whole wheat tortilla quiche.

  2. I have been making a bunch of my own individual baked oat recipes too and see that this is quite the trend on the web now. Just started using chia seeds as well. I have made a carrot cake and a banana version that I will be posting in the future!
