Gotta love what the sweetness of a banana can do.
The only bad part about this breakfast…
The 30 minutes it has to spend in the oven. A long wait…but totally worth it. Like totally.

Well…it tastes like a cookie.
Yield: serves 1
1/3 cup old fashioned rolled oats
1/2 tsp cinnamon
1/4 tsp baking powder
1/3 cup (vanilla soy milk)
1/4 tsp vanilla
pinch salt
pinch nutmeg
1 Tbsp raisins
1 chia egg (1 Tbsp chia seeds + 2 Tbsp water) (could probably use an egg white instead for a non-vegan option, haven't tried it yet)
1/2 large banana, 'melted' in microwave
toppings
banana slices
raisins
Mix together 1 Tbsp chia seeds with 2 Tbsp water. Let sit 5 minutes, or until gel-like in consistency.
Slice half of a banana length-wise and place in a microwave for 1 minute. Flipping banana once halfway through. Banana should be almost completely 'melted' when removed from microwave.
Meanwhile, in a separate bowl, mix together all remaining ingredients. Add in melted banana and chia egg. Mix well. Pour into a small, greased, oven-safe dish. Bake at 350 degrees for 28-30 minutes.
Immediately top with toppings and serve.
