Peanut Butter Cookies

I used original Jif Peanut Butter in these cookies.

The jar doesn’t say all-natural.

It doesn’t say organic.

And I think it has the same amount of sugar as it does peanuts.

But Jif has that commercial.

You know…the one where the little girl and her father are building a tree house together.  And the little girl makes her dad a peanut butter sandwich and he say, “Did you make that for me?” And she says, “Well you’re making this for me!”

And then your heart just melts and you go buy a jar of Jif.

Or at least that’s what I do.

And then I make vegan cookies out of it.

Peanut Butter Cookies (vegan)

makes 20 cookies

[adapted from the brilliant Chocolate Covered Katie]

1 cup oats (ground into a flour)

1/3 cup raw oats

1/2 cup brown sugar, loose

1 1/4 tsp baking powder

1 cup peanut butter, salted

6 Tbsp applesauce

1 tsp vanilla

Preheat oven to 350F.  In the bowl of an electric mixer, add oat flour, oats, brown sugar, and baking soda.  Turn on your mixer to combine your dry ingredients.  Add in peanut butter, applesauce and vanilla.  Mix ingredients until cookie dough forms.  Roll dough into 20 small balls.  Using the back of a fork, gently flatten the cookie.  Bake for 8 minutes.  Remove from oven and transfer to a cooling rack.  The cookies will look underdone when removed from the oven.  Allow cookies to cool slightly and then go watch the Jif commercial again and feel all warm and fuzzy and emotional inside as you eat a warm, delicious cookie.  Or not, but that’s what I did.

    Your cookies sound wonderful,I am a huge fan of anything oat-y and nut butter-y,so I should pretty prossibly consider making these… ;)

    • I know, I’m kind of out of control with all this oat flour! I should change the name of the blog to “Bakes with Oat Flour” or something like that:)

  5. Yum! these sound and look amazing! i just googled the JIFF ad and yes, that definitely justifies buying it ;) i would too! just wondering are these cookies more biscuity-crunchy or soft and gooey? do u have any tips on making oat-flour based cookies crunchy?

  6. To make those crunchy, you’re aiming for a biscuit-type dough -much drier and crumbly, but still a dough. So you’ll need to increase the ratio of oat flour – the pulverized oats, that is – to peanut butter and applesauce. You could do this just by cutting the peanut butter by a 1/4 cup to 3/4 Cup and the applesauce by 1 Tbsp or so. Or you could just increase the oat flour much more and make smaller cookies.
