Sweet Potato Muffins with Peanut Butter Cheesecake Frosting

I’m calling these muffins instead of cupcakes.  That way, we can still eat them for breakfast.

And for the same reason I also left out the chocolate chips.  It took everything I had in me to not add in the chocolate.  But, if I eat chocolate at breakfast, my eating for the rest of the day tends to be less than ideal.  It’s like my gateway drug.  Someone has been watching too much Breaking Bad.

So this weekend was filled with wedding stuff.  Friday I met with the florist, the linens company and the cake maker.  Right before we started tasting cakes, Andrew said something like, “I really don’t see why people have cake tastings, they’re all gonna be good.”  Gahwhat?! That is so weird.  Why would you say something like that?!  It’s probably the same reason why he has a supply of peanut butter and chocolate for me at his apartment that he manages to never touch.  My self control is not quite as refined as his. 

Anyways, eighteen baby cake bites later, we had our flavors chosen.  One of my layers is going to be strawberry.  When I told that to my dad he was like, “ugh gross, why’d you pick that flavor?!”  But I’m telling you, it was so good.  I woke up the next morning and texted Andrew about how pleased I was with my cake flavor decision making.  These are the deep thoughts that occupy my mind.

Then on Saturday, we went to get Andrew fitted for a tuxedo.  I was somehow under the impression that I would get to see the entire tuxedo on him…no.  Stupid Bride Wars, way to fill me with unrealistic expectations.  I had all these different tuxedo combinations I wanted to see (even though we both knew what he was going to wear…I just thought playing dress up sounded fun).  But yeah, you don’t actually get to see how the entire tuxedo will look.  They just take the measurements and done.  I did get to see what the shirt + jacket would look like.  I’ll take it.  But that’s an issue that needs delving into.  Because I feel like you should get to see the entire tuxedo…even if it’s not a perfect fit.  But I’m thinking Men’s Warehouse doesn’t care too much about my unmet expectations.

Speaking of expectations, when I think of sweet potatoes I think orange.  Before California sweetpotatoes came along, I never even knew white sweet potatoes were a thing.  I mean, how completely fab.  You look at it and you’re like, that’s a plain ol’ white potato but then you bite into it and you’re like, “whoa…talk about a blessing in disguise, that’s a California sweetpotato.”

And then you’ll say, “I’m so glad I’m eating this medium-sized California sweetpotato that has 4 grams of fiber, 2 grams of protein, a good source of vitamin C and more than a day’s worth of vitamin A, all for 105 calories!” 

Yes, that is exactly what you’ll say.

My love for sweet potatoes all began when I realized you could stuff them with things.  And now, I roast an entire pan of them on Sunday evenings so I have something more exciting than lettuce to top my salads with during the week.  However, California sweetpotatoes are different than plain ol’ sweet potatoes in “that they are grown in soft sand and are hand sorted during harvest to minimize scarring and scratching.  The result is a visually, higher quality (i.e. more attractive) sweetpotatoes.”  And who doesn’t want to eat more attractive food?

SweetPotato Muffins (4 of 4)

California Sweetpotato Muffins with Peanut Butter Cheesecake Frosting

Yield: a dozen muffins

Ingredients:

1 1/2 cup whole wheat flour
1/2 cup oat flour
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt
1 cup California sweetpotatoes, roasted and mashed
3/4 cup milk (I used unsweetened, vanilla almond milk)
3 tablespoons coconut oil, melted
3 tablespoons brown sugar
3 tablespoons white sugar
1 egg
1 teaspoon vanilla

frosting
1/4 cup peanut butter (no added sugar or salt)
1/2 cup plain greek yogurt
1 tablespoon honey

Directions:

Preheat oven to 350F. In a large mixing bowl, combine whole wheat flour, oat flour, cinnamon, baking soda, baking powder and salt. In a separate bowl, combine mashed sweetpotatoes, milk, coconut oil, brown sugar, white sugar, egg and vanilla extract. Pour the wet ingredients into the dry ingredients and stir until combined. Batter will seem a little thick for muffins.

Divide the batter evenly between 12-lined muffin tins. Bake for 25-27 minutes, or until a tooth pick comes out clean.

While the muffins are baking, make your frosting by vigorously mixing together peanut butter, greek yogurt and honey. Allow to set in the fridge until the muffins are cool.

  2. I thought the same thing regarding Tux testing!!! I want gray tuxes, but the fiance wasn’t so sure about them….we went to try one on (also at Mens wearhouse), failure! Nothing to try on whatsoever…and ranting ensured. On a positive note, those muffins look amazing!!!

      • No, we were just engaged in May! My fiance tried on a dark gray suit jacket instead…just to get a feel for it. He decided the gray looked really good (Yay!) which I think will complement our outdoorsy Oregon wedding! Don’t worry about the tuxes….your fiance will be in it and that’s the most important part :)

  5. OMG the wedding cake tasting !!!!!!!! Okay so how bad would it be if my bf and I went wedding cake tasting and just pretended to be engaged? That little scenario has been floating around in my brain for quite some time…

    Anyway, where can you buy these California sweetpotatoes?? These look DELICIOUS. Once again, you have a knack for making everything I want to eat!

    • Cake tasting was so fun. Seriously so so so fun. I would totally support you in your pretend-to-be-engaged cake tasting appointment. Too funny!!

      Better yet, there should be a restaurant that offers cake tastings for one of their dessert options…how fun would that be? It could come with like 5 bowls of different flavored frostings and 5 cake flavors and then you could just mix and match them together. Yes, that would be perfect!

  6. That’s some seriously thick frosting. I think it looks like your best frosting recipe yet. I’ve been looking for a good, thick, creamy frosting that looks like the real deal without powdered sugar and the like. I am going to pin this recipe twice. Once for the frosting on my… uh… *secret* board (haha. Yes I actually use that feature :D ) and again for the whole recipe on my food board :)

      • hahahaha I totally use the secret board feature too!! Like I have 3 secret boards…I think that’s the limit. But secret boards are especially useful for wedding planning details!

        And I was talking to a friend who just went cake tasting as well and she went with the typical all white wedding cake. I guess that’s the traditional option, but the strawberry was just so much tastier!! I couldn’t not pick it!

  8. Haha! Love the segue into the sweet potatoes! The muffins look crazy good…but how could ANYTHING topped with peanut butter cream cheese frosting NOT be good, right? Yay for cake tasting…omg, it would probably take me forever to decide on a flavor! And too funny, I keep a peanut butter jar at my boyfriends house too…COCONUT peanut butter! I have no idea how he practices such restraint! Lol

I just made a ton of sweet potato/squash puree this weekend, and had no idea what I wanted to do with it because it looked like baby food and I have bad associations with baby food after I had my wisdom teeth removed a few years ago. This looks like a MUCH better use of the puree and I’m excited to try them!

    I wonder what you think about making this gluten free. Would you recommend using all-purpose gf flour, or would using an additional 1/2 cup of oat flour work? Do you have any experience with making oat flour cupcake muffins?

  10. Total confession time- we’ve already decided on our cake maker but have still gone to almost every bakery in town… just in case :) Totally one of my favorite parts of wedding planning! That and catering tasting of course!

  17. Can’t think of anywhere to get CA sweet potatoes, except maybe Whole Foods, and don’t want to pay that much. Can you use regular sweet potatoes with this?
