What I Ate This Week.

This past week was such a fun week!!  We found our go-to Mexican restaurant, I got to go on a Media Tour of our new Whole Foods and I went to Dallas for a bachelorette party.  Oh and then Andrew lovingly mentioned how much we spent on groceries in the last 30 days.  Yikes.  That was an eyeopener.  I’m going to try to cut down on the grocery bill a bit with better planning. 


Monday: Mahi mahi served over parmesan polenta sticks.  Topped with tomato, goat feta and basil salsa.

Tuesday: Trader Joe’s Sweet Potato Gnocchi with brussels sprouts + shredded chicken.  We keep eating variations of this meal.  Swapping out different vegetables.  Completely love this gnocchi.

Wednesday: Lettuce Wrap Bar with butter lettuce, leftover pulled pork, pickled red onions, coconut brown rice, sauteed red bell peppers and eggplant, peanuts & cilantro.

Thursday: Out to Mexican.  We found ‘our’ Mexican place.  Everyone needs a go-to Mexican restaurant in their life!  We’ve been trying out a number of Mexican restaurants for a while and none have been good.  Until…Frida’s Mexican Kitchen.  The charro beans were the best I’d ever had.

I got chicken tacos with guac, cheese, pico & charro beans.  Plus ate my fair share of chips & salsa.

Friday: Simple dinner of sauteed chicken + asparagus sauteed in butter & topped with goat cheese + leftover cornbread.

Sunday: After a busy Sunday of waking up at 6am to drive 4+ hours back to Houston from Dallas, going to dietetic internship meetings and grocery shopping…I felt like Andrew and I hadn’t spent anytime together all weekend.  So we went out to Smashburger.  So good and just what I wanted…burgers & quality time.

wrap with 2 scrambled eggs, parmesan, asiago, kalamata olives, roasted red bell peppers, arugula.

lettuce wraps with chicken, avocado, tomatoes, feta-goat cheese and pistachios.

lettuce wraps (again) with leftover greek yogurt curry chicken salad, coconut rice, pistachios, tomatoes, feta-goat cheese.

salad with butter lettuce, sauteed red bell peppers and eggplant, leftover greek yogurt curry chicken salad, sunflower greens, sweet potato tortilla chips.  Dressed with balsamic vinegar + drizzle honey + drizzle olive oil + salt/pepper.

Got to go on a Media Tour of a new Whole Foods near me.  They didn’t have it stocked with produce quite yet so all my pictures were of delicious chocolate…i’ll take it.  Plus they sent us home with goodie bags!!

Chocolate Covered Katie’s chocolate mug cake.  I used oat flour instead of spelt, mashed banana instead of oil and 1 tbsp brown sugar instead of stevia+white sugar. So freaking good.

I loved this cardio workout.  I warmed up with 15 minutes of stairstepper then did the circuit.  I did jumping squats instead of squats and 15 pushups (on my knees) instead of 10.

AND on another day…

I squatted 145lbs.  Yay!!!  New max for me.  Next goal is 185.

What I ate-63

And a puppy picture.  When we got her from the shelter they said she was gonna be ~70 lbs.  But this picture was taken this week…she’s still tiny!  Our vet doesn’t think she’s getting much bigger.  I’ve always been a big dog person but I still think she is the most perfect thing.  (that duck lasted an entire 3 hours before she ripped it to shreds.)

  3. All of your meals look incredible. And now I am tempted to pick up some sweet potato gnocchi next time I am at Trader Joes.

    PS- I totally feel you on the grocery budget. Last month my fiance told us how much we have been spending (on just the two of us) and I almost had a heart attack. I’m trying to reel it in, but we like to eat (good) food! Good luck! :)

  5. Do you have a recipe for the cookie dough bites you ate for breakfast? Those look super tasty!

    • Hey Hannah! For the cookie dough bites just mix 1/2 cup oats (old fashioned or quick), 1 slightly heaping tablespoon peanut butter (no added salt/oil/sugar), 1/2 banana (mashed), 1/4 teaspoon cinnamon, pinch salt (optional). You can add any add-ins you like…chopped nuts, dried fruit, etc. Then roll dough into balls and store in the fridge overnight. No baking required! Eat cold in the morning.

      Hope you like them!!

      The cookie dough bites are super simple! Just mix 1/2 cup oats (old fashioned or quick), 1 slightly heaping tablespoon peanut butter (no added salt/sugar/oil), 1/2 banana (mashed), 1/4 teaspoon cinnamon, tiny pinch salt(optional). You can add any add-ins you like…chopped nuts, dried fruit, etc. Then roll dough into balls and store in the fridge overnight. No baking required! Eat cold in the morning.

  8. Hey Kylie! I love your blog and all your awesome recipes.
    One thing I would love to mention is that everyone has different food needs, so maybe make a comment before your “What I ate” posts that different amounts and types of food are good for different people. As a twenty-something girl with a lot of friends who have gone through eating disorders, it’s cool to see what people eat, but can be detrimental to know exactly what someone else is eating.
    I thought it would be cool to have a little disclaimer before each of these posts.

    • Hey Haley! I’ve had my struggles with eating disorders all through high school and the beginning of college so I know what a dark, overwhelming, hopeless place it is.

      My hope for these posts is to just give people recipe ideas. I’ll make an effort to be more aware of impressionable minds. Thanks for the comment!

  10. Re your pup: I have always been a big dog girl too and somehow ended up with a 14-pound chiweenie almost by accident but have never been so in love! I realized it’s not about the size of the pup, it’s the size of their personality and my little nugget has forever changed my stereotype! your pup is also perfect and i’m excited for you guys and your bundle of joy. ps love your blog. #creepin
