Cookie Dough Banana Pudding Breakfast Parfaits

Today we make the fun breakfast.

What could be more fun than stuffing stemless wine glasses with layers of cookie dough and pudding?  Not much. 

So stemless wine glasses are my favorite glasses to drink milk out of.  What better way to make milk drinking seem like an experience.  It’s always nice to elevate the everyday with milk out of a glass that makes you feel fancy.

The theme for this Recipe ReDux contest is the powerful combination of oats + dairy.

Between Andrew and I, we easily go through a gallon of milk a week.  We give each other judgmental glares if one of us seems to be drinking more than their share.  The absolute worst is having no milk after you just ate a cookie.  Having no milk for breakfast is almost as equally terrible.  We usually run out of milk on Thursday and then complain non-stop about how we don’t have any milk until we go grocery shopping on Saturday.  It’s quite the predictable cycle.

In our house we stockpile oats, because if we ran out of those I’m convinced the world would stop spinning.

Rarely does a breakfast of mine not involve oats and dairy.  For instance, this smoothie and this smoothie…quick oats + milk.  This creamy oatmeal…old-fashioned oats + milk.  This pumpkin baked oatmeal…old-fashioned oats + milk + greek yogurt.  This overnight oats…old-fashioned oats + milk + greek yogurt.  Oh and this breakfast cream cheese frosting…oats + greek yogurt. 

And then sometimes (if you’re lucky) the oats + dairy combo carries over to dessert, like with this oatmeal cookie topped cake batter froyo or this peanut butter cookie chia seed banana pudding

You see, I live in a world of all things oats and dairy.  Maybe it’s because I think cows are just the cutest animals…those ears just get me.  Or maybe it’s because I think there is no better smell than when you open a fresh container of oats.  Either way, it’s all delicious.

For this recipe, I wanted to do something a little more fun than a smoothie.  I absolutely love soaking oats overnight and then blending them into my smoothies in the morning for a little fiber boost + some staying power.  I’d much prefer to blend whole grain oats into my smoothie than topping it with a granola, which even though is delicious is also rather sugary. 

I knew I wanted to make something cold because it’s summer and I live in Texas so it’s quite toasty outside.  I also wanted to make something with cherries, but cherries are so delicious right now that I don’t want to do anything but eat them straight from the bag.  So I forgot about the cherries and smoothies and went with a banana pudding parfait thingy instead.

It’s cold and creamy and oh-so-slightly cookie dough like.  If you’ve read this blog for a hot second you know that I’m all about cookie dough-esque things. 

This oats + dairy combo never gets old.

Cookie Dough Banana Pudding Breakfast Parfaits
Cookie Dough Layer
  1. ½ large banana, mashed (~1/4 cup mashed)
  2. 1 cup quick oats, divided
  3. 3 tablespoons crunchy peanut butter (salted)
  4. 1 tablespoon milk
Other Parfait Layers
  1. 1 cup vanilla greek yogurt
  2. ½ large banana, sliced
  1. In a small coffee bean grinder or small food processor, process ½ cup quick oats until a flour forms. Pour flour into a bowl. Add in remaining quick oats. In a separate bowl, combine mashed banana, peanut butter and milk. Pour peanut butter mixture into oats and stir until a dough consistency forms.
  2. In two cups, layer cookie dough, greek yogurt and sliced bananas. Repeat until all ingredients are used up. Eat immediately or make the night before and store in the fridge overnight.
serves 2
  1. Best if you make the night before and eat cold in the morning.

So I made this this morning but instead of layering the cookie dough with greek yoghurt, I poured my strawberry banana smoothie over it and eating it was like digging for gold with the little bits of cookie dough and strawberry smoothie ahhhh SO delicious. And I totally agree about the diary + oats combo. Can’t go wrong. Hugs from Australia!
