Roasted Grapefruit with Walnut Granola

 Today we discuss: How you should be eating your grapefruit.

But first, let’s talk about my feelings.

I felt like a blinked and it went from Friday night to Sunday night.  And now I’m laying on my floor writing this post.  We did stuff.  I know we did, but where did the time go?

Saturday night we went to dinner here with some friends and we weren’t impressed.  I got the scallop skewers + brussels.  Both were just okay.  Andrew got Blue Crab Fried Rice…yum, right? Butttttt it ended up being so spicy that Andrew had to ask for a glass of milk because his mouth was on FIRE. The owner/manager guy was like, “yeah, that’s the habaneros.”

To which I was like, “holy smokes?! How you gonna put habaneros in food the general public is going to eat?”  Of course I didn’t say that because I’m super non-confrontational, but that’s what I was thinking? I mean, how many of you out there are okay munching on habaneros?  I’m a total spicy food lightweight, but those things are pretty hot no matter who you are…right?

Sunday we meal prepped for the week.  I’ve been trying to eat more veggies at lunch.  I was talking to one of my sister’s friends and she said that she “eats an obscene amount of vegetables.”  To which I thought, “I wanna eat an obscene amount of vegetables.”  So I’m working on it.  I mean, a serving of vegetables is a cup of cooked veggies and if you’re trying to get 7-9 serving of fruit & veggies each day, that’s quite a bit of veggies to fill your life with.

In other news, Andrew seems to have major crushes on all the HGTV girls (i.e. Nicole Curtis & Joanna Gaines).  Initially I thought he just liked seeing the renovations, but I’m learning he has ulterior motives.   For instance, when I just asked him what his favorite show on HGTV was called he said, “the one with Joanna”.  Should I be concerned that they’re on a first name basis?

Side note: I don’t think I’ve ever written “ulterior” before.  I had to google it to make sure that was in fact the way to spell the word I’m trying to use. 

So I guess I should pick up house flipping.  Is that what that means?  Ugh, but I don’t wanna flip houses.  I just wanna bake fruit with crunchy toppings and tell you about it.

Oh…and I wanna never ever unload the dishwasher again.  Yes, that is what I want.

I’ve always been on the fence with grapefruit.  It has that sweet delicious flavor and then it gets all sour on you and your taste buds are like “why would you do that to us?”  But then I always take another bite because I’m indecisive and I like it but I don’t like it and I’m just confused about the whole thing. 

One thing I do know is that if you add an oatmeal delicious topping to anything, I’ll like it.  Like could we top some mushrooms with a granola topping pulease!? I’m actually planning to put an oatmeal streusel on some salmon later this week and I’m all kinds of excited over it.

Awhile back I made these apples, which got me thinking that I should put an oatmeal crumble on more fruits in my life.  So the oatmeal-walnut granola topped grapefruit was born. 

I can’t wait to do this same exact thing with bananas.  Oh and peaches.

Roasted Grapefruit topped with Walnut Granola! Perfect for breakfast, brunch or snacking!

Roasted Grapefruit with Oatmeal Walnut Granola

Yield: serves 2

Prep Time: 10

Cook Time: 20

Total Time: 30

Ingredients:

1 grapefruit, cut in half

1/4 cup walnuts, finely chopped

1/8 cup old-fashioned oats

1/8 cup oat flour

1/8 teaspoon salt

1 tablespoon honey

1 tablespoon butter, melted

1/4 teaspoon cinnamon

1/8 teaspoon almond extract (2-3 drops)

couple spoonfuls greek yogurt

Directions:

Preheat oven to 350˚F.  Place grapefruit cut side up on a baking sheet.  In a bowl, combine walnuts, oats, oat flour, salt, honey, butter, cinnamon and almond extract.  Divide granola topping evenly between the two grapefruit halves.  Bake for 20 minutes.  Top each with a spoonful of greek yogurt.

Granola will be slightly crunchy on the outside, but will remain bready on the inside.  It's good.  That way it is reminiscent of a cookie.

  1. My mom and I realized my dad is watching the bachelor this year because, well, duh. It took us a while to think about the fact it’s a bunch of girls walking around in bikinis. All of their bitching and crying aside, guys can easily tune things out for watching “good tv”. Ew. lol

  2. Grapefruit is my husbands favorite fruit and I’m not a huge fan but I want to like it, I was thinking about trying it broiled with cinnamon and sugar… this sounds even better-must try! Granola FTW!

  4. Woah! I never thought to roast grapefruit before. It’s a fruit I actually don’t really like that much but wish I did… maybe this way will be a game changer!

  6. I have to admit I am not a big fan of grapefruit…but the granola cookie topping deliciousness has got me thinking of giving it a try again. I may or may not sub the grapefruit for i dont know a banana and turn this into banana split with melty peanut butter + chocolate ? Does that totally defeat the healthy breakfast thing? 
    Oh and btw you’re photos…stunning. I can’t get over the lighting. Do you have any tips for how you get such natural looking pictures? I always seem to have to do a ton of editing to mine… 
    Okay I’ll stop rambling now and go make this :) 

    • Getting a tripod has made worlds of difference in my photos! Do you have one? It let’s me set the shutter speed super low so more light goes into the photo, which gives me that natural light look. I still have to edit though! And I plan photo shoots around good weather!

    I totally feel ya about being on the fence with grapefruit. I love eating it in the winter (because it’s so fresh) but I never even thought of toppings!

  10. alot of people are on the fence about grapefruit but its one of my favorite fruits…although i hate to peel it. 

  11. My mom loves her grapefruits warm (she microwaves the halves then sprinkles with brown sugar) which is something I’ve never understood, but granola topped I can get on board with! 

  12. Kylie, this is very quickly becoming one of my favourite breakfast recipes of all time!!

    My only question… is there any way to neatly eat this? It looks perfect all out of the oven, but then I need a line up of utensils to get into it and it ends up all over the plate before my first bite! Any etiquette tips here (including just pure acceptance that it is a delightful mess) would be appreciated. Happy Friday!
