A weekend get away + my favorite way to make oatmeal.
Last Friday I told Andrew I needed to get away.
We had woke up that morning and Maggie couldn’t walk. Her back leg was super painful and she could barely move. After x-rays at the Vet, we found out nothing was broken…probably just the result of slightly deformed hips. What can you expect when you get a shelter dog that’s a mix of 2 different breeds that weren’t necessarily compatible to breed? She has the legs and tail of a large Labrador and the body and head of a small Terrier. But it’s all okay because she’s the perfect dog that never gets on the furniture or destroys anything;)
After some meds she was feeling better, but I thought a relaxing weekend was what we all needed.
So we headed for a weekend escape to my parent’s lakehouse.
I wanted to be active without thinking about exercising.
I wanted to leave my makeup bag at home.
I wanted to not open my computer.
So that is exactly what I did.
Friday evening before we headed out of town we picked up a <3-shaped pizza from Papa Murphy’s. We were starving by the time we got to the lake so paired with a salad this made the perfect, easy dinner.
The next day we woke up and I made both of us tea lattes (because we all know how I feel about tea lattes). They were so cozy that I made us each a second mug before we had breakfast.
Breakfast was whipped banana oatmeal.
For the oatmeal I cooked 1 cup oats in 2 cups milk. Then whisked in 1/2 mashed banana, 1/2 sliced banana, 1/2 teaspoon cinnamon and a pinch salt.
I cooked them low and slow (to make them as creamy as possible) and constantly whisked everything together.
Then I sat down and ate this bowl of oatmeal as slowly as I possibly could. A change from my typical morning routine of quickly eating something as I rush out the door in the morning.
Rather filled from breakfast, we decided to go out kayaking for a bit to help us digest.
And then just like that it was lunch time. We didn’t go to the grocery store and just bought what we had from home, so we tried to keep meals simple. Omelets it was.
With a side of tortilla chips because lately I can’t get enough crunchy + salty.
Then we went and played tennis, brainstormed blog ideas, watched movies, drank more tea and then…it was margarita time!
Paired with snacks so I didn’t get totally shawasted.
Then I worked on a recipe for the blog (coming Friday!).
Then dinner was leftover pizza & salad + broccoli & snap peas that I had brought from home. We just roasted up the veggies and served them on the side.
…and dessert. Vanilla ice cream + chocolaty goodness that I’ll tell you all about on Friday.
We got up early-ish Sunday, cleaned the house a little and then hit the road back to Houston.
It was quick, but a much needed getaway!
I love your oats loving ways. Your exact porridge (I’m an Aussie) is my favourite breakfast of all time.
That’s awesome that your parents have a lakehouse. If someone in my family had a vacation house then I’d be all over that :) and margaritas on a weekend getaway sound pretty much perfect. Glad you had a relaxing weekend!

Oh I’m so with you. I’m a beach person over a lake person FOR SURE!! Texas doesn’t have too many (Read: any) nice beaches:(

SO glad you got the getaway you needed! I’m with you on the whole I wanted to stay active without thinking about exercising thing. :) Much needed sometimes. Plus, kayaking is SO FUN.

this kind of therapy is so important for a healthy body, mind, and soul. sorry about your pup – sounds like a herniated disc that happened with my puppy last year.
Those oats sound lovely! I never have the patience to make them on the stove, but I really should do it more often because they are so much tastier. Can’t wait for the chocolatey goodness Friday :)

Sounds like such a lovely weekend. Having my parent’s beach house an hour away is probably the thing I miss the most now that I live overseas. I tell ya, it’s where my soul lives. I’m totally going to have that banana oatmeal for breakfast tomorrow. Can’t wait!

That’s pretty much how I make my oats too, although you use double the banana.. and I always microwave it in the morning bc I’m usually rushing to start work/impatient.
