Brown Butter Oatmeal Cookies Stuffed with Nutella

A recipe to inspire some weekend baking.

So this was supposed to be a small-batch recipe. But somewhere in between deep inhales of brown butterness I got a wee-bit woozy and forgot all about those small-batch plans.

This is my first time making brown butter. And let me tell you…there is nothing better to deeply inhale. Holy cannolis, you guys. Get a saucepan and a stick of butter and heat it up. And then maybe do some yoga with that scent wafting throughout your house. You will be more relaxed than you ever have been before.

Then roll up that yoga mat and preheat the oven.

I’ve always been a supporter of stuffing cookies. It makes cookies even better. And then you add brown butter into the scenario and things get unreal.

Occasionally (about twice a year), I get a little weak at the knees over nutella. Last weekend was one such occasion and then these cookies were the love child of that craving.

They’re oatmeal cookies, but I didn’t add raisins or nuts or anything else that would get in the way of the brown butter + oatmeal + chocolate hazelnut taste.  Helloooo, weekend!!!!!!

Brown Butter Oatmeal Cookies Stuffed with Nutella

Hearty oatmeal cookies stuffed with nutella. Brown butter makes these oatmeal cookies sure to satisfy any cookie or chocolate craving.

Yield: a dozen cookies

Prep Time: 15 minutes

Cook Time: 15 minutes

Total Time: 30 minutes

Ingredients:

2 cups old-fashioned oats

1 1/2 cup oat flour, spooned into measuring cup and leveled off

1 1/2 teaspoon cinnamon

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon salt

1/2 cup honey

1/4 cup + 2 tablespoon unsalted butter

1 large egg

1 teaspoon vanilla

1/2 cup nutella

Directions:

In a saucepan, heat butter over medium heat until browned (watch it carefully so it doesn't burn).  In a bowl, mix together oats, oat flour, cinnamon, baking powder, baking soda and salt.  Add in honey, brown butter, egg and vanilla.  Mix together until a dough forms.  Place dough in the freezer for 10 minutes. 

While dough is chilling in the freezer, preheat the oven to 350ºF.

Remove dough from the freezer.  Roll ~2 tablespoons dough into a ball and then flatten.  Top with ~2 teaspoons nutella and carefully wrap the edges of the dough around the nutella.  Add a flattened piece of dough to the top of the cookie ball to fully surround the nutella.  Place cookie on a greased baking sheet.  Continue the cookie stuffing process until all the dough is gone.  Bake for 10 minutes, or until the oatmeal cookies are just turning golden brown.  I've been keeping mine in the freezer and pulling one out as needed.

Note: I would imagine melted coconut oil would work fine in place of the brown butter.

  3. These sound so good! My husband is allergic to hazelnuts though. Do you have a suggestion for replacing the nutella?

    • Peanut butter or almond butter mixed with melted chocolate chips!:) or another commenter mentioned using Trader Joes chocolate almond butter if you have a TJ’s near you!

  4. Hmm… I have some cocoa almond spread from TJ’s in my pantry. I may try these this weekend with it and see how it goes…

  7. Yum! I’m a huge fan of brown butter. I bet you’re hooked now, right? I have a similar obsession like you do with Nutella. Mine is peanut butter. Sweet or savory recipes, it’s almost good in everything.

  9. Hi, I don’t have oat flour. Will regular all purpose flour do? Or should I adjust the measurement a little?

    • All purpose should do fine!! May have to adjust the measurement a bit. I’d recommend adding the flour in 1/4 cup increments until the dough looks like normal cookie dough:)

  10. Wanted to love these, but I must have done something wrong. The dough was a little dry, and the filling oozed out all over the place. They were also very dense and didn’t fluff up at all. :(

  11. *forehead slap* I doubled the recipe and in my rush completely omitted the baking soda. No WONDER they turned out like rocks. I also tried to sub in dulce de leche, so that might be why the leakage. I’m not fond of Nutella.
