Mini Hummingbird Cakes with Grapefruit Cream Cheese Frosting

Well, at least trendy Easter and not so much biblical.

So have you had Hummingbird Cake? Is it a Southern thing?  I don’t know.  But if you like carrot cake or bananas, you’ll probably luv this.

It’s a cinnamon & banana cake with cream cheese frosting.  Frosting…not icing.  Frosting always sounds so much more decadent and ohmygahhhyummm than icing does.  Oh, and there is pineapple in it too. 

Now, I’m not the biggest canned pineapple fan after I was forced to eat it at ski school when I was like 8.  I don’t know if canned pineapple is the reason I hate snow skiing or if skiing is the reason I hate canned pineapple, but either way this cake makes me want to always have canned pineapple in my pantry just in case I NEED to make this cake again. 

Mini Hummingbird Cake \\ immaEATthat  Mini Hummingbird Cake \\ immaEATthatCome Easter (or really any family gathering), there are a ton of desserts.  I don’t want just one slice of cake when choosing my dessert of choice. 

I want a taste of everything. 

I want a tiny slice of cake and a sliver of brownie and a baby scoop of banana pudding and 1/4 of a piece of pie and just the doughy center of a cookie, which is why mini cakes are the way to go for Easter desserts.  You get just a taste.

To this cake, I added grapefruit juice to the frosting.  Could you taste it?  Not so much. 

I was hoping it’d dye the icing a shade of pastel pink, which would just make it even more Easter-like.  But the pink tone didn’t really come through.  I still liked adding the grapefruit though.  It made the cake seem more FRESH, which we know is one of my favorite things right this minute.

So I had to make sure my pink-painted nails were in these pictures because I got a manicure and pedicure Saturday (which I’ve only done like 5 times in my life…prom, best friend’s wedding, my wedding, and this time.) and I totally got swindled by the nail lady.  It was supposed to be $35 total for nails & toes, but SHE switched nail polish from the one I had chosen (same color, different brand) and said that it was a more expensive nail polish so I had to pay $10 extra.  The whole thing was bologna.  I had to get my monies worth out of them so they’re going to be in the freaking food pictures. 

Other than bedazzling my nail with hot pink, I bedazzled the frosting on this cake with Annie’s Snickerdoodle Bunny Cookies.  Those cookies are quite possibly the best decoration for Easter desserts or the perfect non-chocolate treat for the Easter Bunny to bring to your house for Easter morning because BUNNIES.

I’ve been told by Andrew that the Easter Bunny is on a budget and isn’t allowed to go crazy and fill baskets with goodies for us to wake up to. 

But I don’t think the Easter Bunny is a very good listener and know for a fact that the Easter Bunny does what she wants and I have a feeling that there will be some chocolate (and Milkbones for Maggie) in some Easter baskets on our coffee table come Easter morning.

Make this for Easter.  And I hope you feel rather Pinteresty and crafty as you decorate it with bunny cookies and keep saying “oh this is the cutest little cake.”

P.S. If you make this, you may want/need (debatable) a mini cake stand.  There’s this mini minty one on Pinterest that would make every mini cake prettier.  Just saying.

Mini Hummingbird Cakes with Grapefruit Cream Cheese Frosting

The EASTER CAKE.

Yield: Two 4 layer, 3.5-inch cakes

Prep Time: 35 minutes

Cook Time: 25 minutes

Total Time: 1 hour

Ingredients:

Cake

1 cup whole wheat pastry flour

1/3 cup banana, chopped into chunks

1/3 cup canned pineapple, drained & chopped

1/4 cup pecans, roughly chopped

3/4 teaspoon cinnamon

1/2 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1/2 cup ripe banana, mashed

1/3  cup honey

1 egg, lightly whisked

3 tablespoons coconut oil, melted

1 teaspoon vanilla

Cream Cheese Frosting

8 oz cream cheese, at room temperature

1/2 cup powdered sugar

1 tablespoon grapefruit juice

1/2 teaspoon vanilla

Annie's Snickerdoodle Bunny Cookies

 

Directions:

Preheat oven to 350ºF.  Grease 4, 3.5" ramekins REALLY well with coconut oil/butter & flour.

First, make your cake.  In a bowl, combine flour, banana chunks, pineapple chunks, pecans, cinnamon, baking powder, baking soda and salt.  Add in mashed banana, honey, egg, coconut oil and vanilla.  Combine until a batter forms.  Divide batter between ramekins.  Bake for 20-25 minutes, or until inserted toothpick comes out clean.

Allow cakes to cool before removing from ramekins.  While cakes are cooling, make your frosting.  In a bowl, use an electric mixer to combine room temp. cream cheese, powdered sugar, grapefruit juice and vanilla.  Set aside until cakes are cool.

When cakes have cooled, remove them from their ramekins and use a serrated knife to slice them in half to make your layers.  Put a thin layer of frosting between each layer before frosting the entire cake. 

Just before serving, decorate cakes with Annie's Bunny Cookies.

If you like A LOT of frosting, you may want to double the frosting recipe<3.

  1. Aren’t nail places the worst?! I always get super bad anxiety about going there because it always ends up SO expensive! I started paying before they ever even start so they can’t tack on extra money. 
    Your pictures are always so pretty. Can you like come to my house and teach me some tricks :) haha

  2. Can I just say how cute this recipe is?! I HAVE TO MAKE IT FOR EASTER. :) Could I sub a gluten-free flour blend (bob red mill cup for cup gluten-free blend) for the whole wheat pastry flour?

  3. Could I somehow double the recipe to make a bigger cake? I want to make this for my family and I. (4+)

    • As is the 2 mini cakes will serve 4-6 people (2-3 people/cake). But you could use larger ramekins or cake pans to make one bigger cake too. You may not need to double the recipe;)
