Peanut Butter Cup Peanut Butter Cookies
Let’s brainstorm…what else could we put peanut butter cups in?
We’ll start with these cookies and will likely progress to pb cup stuffed pancakes next.

With the impending Easter holiday, chocolate + peanut butter will be eaten. So my mind says it might as well be in cookie form.
Do you have Easter traditions? Like a fancy brunch or Easter egg hunts or Easter baskets in the morning filled with these or church or all of the above? Ours includes all of the above minus the fancy brunch. We’re doing burgers come Easter Sunday. I’ll take it. And after I go raid Target there will be Easter baskets that morning. If I’m ever gonna get promoted to the real Easter Bunny, I need practice now.
Have you seen these dresses? I know they say they’re for mom (…add it to the list of reasons I can’t wait to have kids), but I think us future moms could wear them too. So classy and comfy looking. And I love their tagline.
So you guys. I’ve been having this numbness on the left side of my face and in my left arm AND tingling sensations in my arms and legs. On Wednesday evening I had this test (I think it was called an EMG) where they put electrodes all over me and then used this probe thing to shock me and test my nerves.
It was miserable.
And the technician doing the test was so unsympathetic. I started crying (not like one glistening tear, but like CRYING) and the technician reached for a Kleenex that I was sure she was going to give to me…but then she used it to wipe the gel off her hand. THEN the next part of the test involved them inserting a needle that had a microphone of some sort on it into the muscles on my left side. Like 15+ needle sticks. And then they had me contract the muscle and they recorded the noise it was making. That part wasn’t as bad as the shock part.
Sooo verdict is…I have entrapped/pinched nerves at C6 and L5. I’m starting sports physical therapy and anti-inflammatory meds soon. Hopefully that’ll fix everything up because ouch.
Wednesday night I couldn’t sleep AT ALL. I haven’t been sleeping well with this neck pain I have…hello C6. One night I slept on our hard wood floors to see it that would help. It didn’t and my dog thought I was crazy as she looked down at me from the fluffy bed.
But back to Wednesday night, I woke up hungry. So hungry. Like the hungriest I’ve ever been. So I went and had a piece of this at 1am. It was weird how hungry I was. It wasn’t like normal hungry for me. It was out of control hunger. I think one of the problems is looking at Pinterest pictures of food as I fall asleep. My metabolism is like, “YES I WANT ALL THAT! Lezzz gooooo!”
And then I got back in bed and Andrew sat up and said “Polly Pocket.” And then laid back down fast asleep. One of the weirdest things about being married is getting insight into Andrew’s dreams. The next day he said that he doesn’t even know what a Polly Pocket is. Weird.
And look at that above…more pink nail pictures. I’m sure they’ll be chipped and I’ll be back to the un-polished me by tomorrow. (…”on her bony, unpolished finger.” name the movie.)
So I just started grinding my own coffee beans before brewing and I should have been doing that this whole time. “This whole time” being my entire life. I’m becoming quite the coffee drinker. Or iced coffee drinker. It’s just so nice in the morning. I’m drinking full caf right now, but have plans to switch to half caf and then decaf soon. Not because I don’t want caffeine or think there is something wrong with caffeine…it’s just if I’m ever in a place where it’s difficult for me to find caffeine (like in a rush to get to work or at a friend’s house or something), I don’t want to get an insane headache from my lack of caffeine.
Let’s get to the cookies.
I’m a small batch cookie fan because there are too many different types of cookies I want to eat for me to make a whole batch of, say, snickerdoodles. I don’t want to be stuck with a whole batch of snickerdoodles. But I would like to be stuck with a 1/4 of a batch of snickerdoodles. Or a 1/4 batch of peanut butter cup peanut butter cookies. Especially if the top is sea salted.
This was my first time trying Justin’s peanut butter cups. They’re so tasty. But then again it’s chocolate and peanut butter so ya know it’s gonna be good…especially if you cookie-fy them by surrounding them in a peanut butter cloud.
Peanut Butter Cup Peanut Butter Cookies
Yield: 4 cookies
1/2 cup + 2 tablespoons oat flour
2 1/2 tablespoon natural peanut butter
2 tablespoons honey
1 tablespoon unsweetened applesauce
1 teaspoon vanilla
small pinch salt
4 Justin's Dark Chocolate PB Cups
sprinkle sea salt
Preheat oven to 350ºF.
In a bowl, combine all ingredients except for Dark Chocolate PB Cups and sea salt. Stir until a dough forms. Roll dough into 4 balls. Gently press a PB cup into each cookie dough ball. Bake for 8 minutes. Remove from oven and sprinkle with sea salt. Allow to cool before serving (or not).
