Stuffed Chocolate Chip-Less Chocolate Chip Cookies

So they’re stuffed with chocolate chips.

And chocolate hazelnut butter.  AKA nutella. 

I did search my cabinets and pantry for something else to stuff inside these, but I came up with nothing.  Then I reminded myself that sometimes it’s okay to be simple.  And basic.

While I was waiting for these to cool a bit before taking pictures of them, Andrew got home from work and started telling me the reasons why he should be able to eat one immediately instead of waiting for me to take pictures. 

There were 6 cookies.  He reminded me how I always say that odd number cookies/slices of bread/anything are better than even numbered cookies/slices of bread/anything to take pictures of.  Used my own advice against me.  I do say that all the time.  Odd numbers just look better.  It’s one of the many things Regan Jones has taught me.  So I let him eat the ugliest of the cookies.  But let’s be real.  No cookie is ugly if it tastes deeelicious.

This cookie recipe is becoming one of my favorites.  A good base for a plethora of cookies to come.  I wanna make a snickerdoodle version. 

The cookies are soft.  Not ooey, gooey.

SOFT.  I know I’m usually all about the ooey, gooey BUT now I’m feeling all about these cookies.  I guess I’m going through some sort of life change.

I remember being 13ish and spending all afternoon with a friend at the mall at Limited Too and ending the day with a sugar cookie double doozie from Great American Cookies.  And my memory remembers those cookies being SOFT.  And they always made me crazy thirsty.  And I loved them.  Do you remember those cookies? They had the rainbow sprinkles.

These cookies seemed worthy of breaking out the Paper Source wrapping paper background again.  I recruited Andrew to hold the background because it was just a piece of fancy wrapping paper wrapped around a thick piece of cardboard and it wasn’t staying in place.  He asked if he got paid for helping.  Unfortunately for him, that’s an internship position and he should be happy receiving the knowledge gained as payment.

I’ve decided that stuffing cookies is one of my favorite hobbies.

Stuffed Chocolate Chip-less Chocolate Chip Cookies

Super soft cookies stuffed with chocolaty goodness.

Yield: makes half a dozen cookies

Prep Time: 15

Cook Time: 10

Total Time: 25 minutes


3/4 cup whole wheat pastry flour, spooned into measuring cup and leveled off

3/4 cup all-purpose flour, spooned into measuring cup and leveled off

1/4 cup sugar

1/2 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

1/4 cup milk

3 tablespoons butter, melted

1/2 teaspoon vanilla

1/2 cup dark chocolate chips, divided

1/4 cup chocolate hazelnut butter (I used Justin's that they sent me)


Preheat oven to 350ºF.  In the bowl of an electric mixer, combine flours, sugar, baking powder, baking soda, and salt.  Add in milk, butter and vanilla.  If dough seems dry, add 1-3 teaspoons milk.  Roll 1/6th of the dough into a ball and flatten.  Top with ~2 teaspoons chocolate hazelnut butter and ~3 dark chocolate chips.  Wrap up the flattened dough around the filling and gently roll into a smooth ball.  Place dough ball of happiness on a greased baking sheet and use your fingers to flatten the dough.  GENTLY...don't squeeze out all the fillings.  Repeat with remaining dough and fillings.  Bake for 10 minutes.  Allow cookies to cool on a cooling rack. 

Melt remaining chocolate chips in a microwave-safe bowl.  Top each cookie with a small spoonful of melted chocolate and use your finger to make the chocolate into a pretty swirl.  Allow chocolate to harden before serving.

  1. I made these dark chocolate cookies once that were filled with caramel and had sea salt sprinkled on top- definitely one of the best cookies ever! It was a pretty big pain to make them though so I’ve never made them again, sigh. Were these hard to make!?

    • I’d say they’re easier to make than caramel stuffed cookies since the nut butter I used is thicker than caramel and doesn’t ooze as much!

  3. These look insane!! I’m usually all about the crunchier cookies, but these are making me question everything about my cookie obsession. 
    I once stuffed cookies with vegan cream cheese icing, which was a verrrrrry good idea!

  4. I think almond butter + chocolate chips would be a good combination. But this already sounds so good!

  7. I love Justin’s nut butters! Can’t wait to try this recipe, I have a bunch of family and friends that would help me eat these up!
