Weekend Happenings

Our weekend started Thursday night with an event I helped plan called Meet the Makers. Claire, Ahrif and I invited some of Houston’s local vendors (those without storefronts yet) to come and showcase their creations.
The event was held at Sharespace, which was the perfect space for the event. I knew I was gonna love it before I even walked in…
Some of the vendors I samples included…
Bpop – they make breakfast and snack popsicles made with whole, organic ingredients. I tasted four of the flavors and my favorite was the Pineapple Green Mama! Made with pineapple, avocado, spinach, cashews, dates, chia seeds and sea salt.
Ripe Cuisine – a delicious vegan food truck. The owner, Stephanie, wrote me a rec for grad school! I had the Beet Falafel complete with hummus, tahini sauce and crunchy pita chips. yum.
Sharespace also had this giant chair/swing that I want to put in our living room.
Friday evening after work Andrew and I headed up to my parent’s lakehouse for a couple days. I spent most of the time sitting in this chair with iced coffee.
And eating watermelon salad (feta + basil + watermelon) my mom made and nachos I made.
And cleaning a dirty dog and eating green chili enchiladas my sister made.
And fishing and cleaning pine needles + leaves out gutters and going on family walks and doing yoga with my sisters.
Then we headed home Sunday afternoon. As soon as we got home I told Andrew that I needed something FRESH. So I made us berry pineapple smoothies and served them with some Dark Chocolate Blue Diamond Almonds I was sent to write a post about. I LOVE them and would buy them on my own in the future. Perfect as a sweet snack or light dessert.
Last night we met a friend for dinner at Smashburger because burgers and Memorial Day Weekend go together. Then we started this morning with some scrambled eggs & muffins that I’ll be sharing on the blog soonish.
We’re taking it easy this Memorial Day and spending some time getting ready for the week. As soon as I hit publish on this post I’m off for a swim workout and then meeting Claire & Ahrif for coffee…but I’ll probably get lunch instead of coffee.
I can’t finish this post without taking a moment to remember all our service men and women and their families. Thank you for allowing me to live the life I do.
