Iced Mocha with Giant Vanilla Bean Coffee Ice Cubes

I bought my giant ice cube tray at Home Goods and it is working wonders in my life by making ice cubes so big that they don’t fit in some of my glasses.  Are these ice cubes more fun than regular sized ice cubes?

As much as I <3 giant ice cubes, chocolate milk is still higher on my list of things I love.  That list also includes puppies, hamburgers when I’m REALLY craving a hamburger (so satisfying) and planning our first vacation for me and Andrew since our honeymoon.

So chocolate milk.

While you don’t HAVE to add anything to chocolate milk to make it SOO GOOD, sometimes it’s nice to mocha your life a bit.

All you need is:

a giant ice cube tray
coffee
Almond Breeze Chocolate Almondmilk
vanilla bean paste (or vanilla extract will do)
and that’s it.

…and perhaps cute straws if you’re throwing a party.

Iced Mocha with Giant Vanilla Bean Coffee Ice Cubes

Yield: serves 4

Prep Time: 10 minutes + overnight chill/freeze

Total Time: 10 minutes + overnight chill/freeze

Ingredients:

4 cups coffee, divided
2 cups Almond Breeze Chocolate Almondmilk
2 teaspoons vanilla bean paste (or vanilla extract)

Directions:

The night before, make a large pot of coffee (~4 cups).  Add 2 cups of coffee into a bowl and stir in vanilla bean paste.  Pour into ice cube molds and freeze overnight.  Pour the other 2 cups coffee into a jar/bowl and allow to cool overnight in the fridge.  In the morning, combine cooled coffee with 2 cups Almond Breeze Chocolate Almondmilk.  Add one giant ice cube into each of your 4 glasses and pour in iced almondmilk mocha.

  3. Giant Ice cube trays! I have never seen such a thing. Do you have to have extra wide glasses to make them fit?

  4. Can you explain the difference between vanilla beans, vanilla bean paste, and vanilla extract? What situations would you use each and is there a difference in amounts (do you put the same amount of vanilla extract as you would paste?)? I’ve seen vanilla beans or paste in recipes a lot lately and have been wondering about it!

    • Vanilla bean paste is just vanilla beans + sugar + vanilla extract. It gives the look of vanilla beans in your ice cream/lighter foods…so it’s a nice touch:) I use vanilla bean paste and vanilla extract in equal amounts in recipes!
