The whole idea of breakfast cookies just makes my soul sing.  And my breakfast and snacktime yell out oh yes yes YES! 

I added peanut butter chips and blueberries.  I found the peanut butter chips at the store in a bag mixed with regular chocolate chips and I spent way too much time separating the two.  You could always make your own pb chips?  That sounds like a fun weekend project and would mean you’d have peanut butter chips galore for these cookies come Sunday morning breakfast time.  Perfect.  Your weekend is planned.

For these cookies I was going for a bit of a peanut butter and jelly theme with the pb chips + blueberries.  

Andrew was SUPER disappointed when he realized that the blueberries were in fact blueberries and not chocolate chips.  The two kinda look the same from a far.  He is one of the biggest berry fans I’ve met and I spend my life trying to get him to wash the berries before he eats them, but when it comes to cookies he’s more of a cookie purist.  In the words of my father when I was still living at home and just started this blog, why can’t you just leave the cookies alone?  

He’s clearly a cookie purist too.

If you’re a cookie purist, revamp this recipe so it fits better with your cookie values.  You know, cookies values, how your innermost self believes cookies should be.  Your cookie values determine your cookie priorities and if those priorities do not involve peanut butter chips & blueberries, that is fine.  

Add chocolate instead because these cookies would still be great sans blueberries & peanut butter chips.  And, dare I say, even sans chocolate.  Who even says sans? I’ve never said that in real life before.

So I’m very much in love with these cookies.  I got a little baking soda carried away on the first batch and they came out tasting baking-soda-y (yaknowhatImean?), which is a flavor I usually really like.  Hello, memories of sugar cookie eating from the Great American Cookie store in the mall when I was 13…they are SO baking soda tasting to me!

But the baking soda issue is fixed now and these cookies are ready for YOU.

Peanut Butter Chip & Blueberry Breakfast Cookies

Yield: a dozen cookies

Prep Time: 10 minutes

Cook Time: 10 minutes

Total Time: 20 minutes

Ingredients:

1 1/2 cup rolled oats
1 1/4 cup oat flour, spooned into measuring cup
1/3 cup honey
1/4 cup coconut oil, melted and slightly cooled
1/4 cup Almond Breeze Almondmilk Coconutmilk Vanilla Unsweetened
1 teaspoon cinnamon
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup peanut butter chips
1/2 cup blueberries

Directions:

Preheat oven to 350ºF.  In a bowl, combine all ingredients except blueberries.  Once a dough forms, gently fold in blueberries.  Roll cookie dough into 12 balls and place on a non-stick baking sheet.  You may need to wet your hands to roll the cookie dough since the dough is pretty sticky!  Bake for 10-12 minutes.  nom!

If dough is too wet, add an additional 1/4 cup oat flour.
