So I’m going through some changes.  For instance…

I’ve somehow become the type of person who listens to NPR.  And enjoys it.  Like I don’t listen to music in the car anymore unless some ukulele performer is being interviewed on NPR and plays a song.  But after Macklemore played that Downtown song on the VMA’s I’ve been listening to it non-stop on YouTube.  It’s ridiculous.  I love it.  But an NPR-listener, who am I?

Other changes…

I’m switching up my blogging schedule again.  Which just proves once again that I am the world’s most indecisive person.  

Posting 5 days a week isn’t working for me.  I love feeling like I’m interacting with you guys more often, but I feel like the quality of the blog posts were suffering…and that’s not what I want.  

I’m going back to posting 3 times/week, but the posts won’t necessarily be on Monday, Wednesday and Friday.  New posts may be on those days, but they could also be on Monday, Tuesday and Saturday.  I’m trying to figure out what blogging schedule works best for me and my eating disorder job.  I hope you continue to hang around here while I figure my life out a bit.

If you’re thinking, are your fingers really that red in real life?

Yes.  Yes they are.  I have the very weirdest skin.

So how are you? I’m good.  I’m just coming from eating a pizza smooshed together with a calzone.  WHAT?! I mean, it’s a genius idea.  Gonna be recreating that pizzahhh soon.  May even get a small business loan.

Oh you guys.  Overnight oats.  They never get old.  Never ever.  It’s pudding for breakfast.  What’s not to love? And these have granola mixed in!

Now.  The trick is, you don’t let the tasty Nature’s Path Pumpkin Flax Granola that I used in this recipe sit overnight in the mix.  You wait until the morning to stir in the granola so it stays crunchy.  Crunchy + creamy just works and makes breakfast all the more a celebration.  YOU WIN.

Pumpkin Flax Granola Overnight Oats

Yield: 2 servings

Prep Time: 5 minutes + overnight chill

Ingredients:

1/2 cup rolled oats
1/2 cup Nature's Path Flax Plus Pumpkin Flax Granola
2/3 cup greek yogurt
2/3 cup 2% milk
2 tablespoon chia seeds
1 banana, thinly sliced
couple dashes cinnamon
toppings: fresh figs + almond butter + more granola

Directions:

In a bowl, combine all ingredients except granola and toppings.  Cover and let sit in the fridge overnight.  In the morning, stir in granola.  Divide into two bowls, add toppings and eat immediately.
