Roasted Verde Salsa Pulled Pork Soup

Meet the dinner I ate almost every night last week.

We ate this soup 3 times last week and I didn’t get tired of it once.  It was so nice having dinner ready to go when I got home from work and it was something warm and filling and came served with a doughy tortilla and a small mountain of cheese.  

Oh cheese.

Get the salsa at Target and the black bean soup anywhere they sell Goya products.  The black bean soup has zero product consistency.  Sometimes it’s thin…sometimes it’s thick, but it’s always tasty.

Back to the soup.  While there is nothing sexy about a crockpot, there…actually there is nothing else to say.  Crockpots are the most unattractive thing to put on your blog yet here I am with a crockpot picture.

AND it’s Andrew’s crockpot he had in college and it has odd stains that I had to hide from the picture.

But this soup.

There’s vegetables in this, which you know is always good because YAY fiber.  A nice amount of carrots, onions, tomatoes and an entire bushel of cilantro because cilantro and tex-mex-y soups are just supposed to run in the same circles…or at least simmer in the same crockpots.

And I mentioned there’s cheese that goes on top.  The problem is choosing the cheese that goes on top as there are SO many delicious extra sharp cheeses out there to choose from.

Andrew said something very insightful this weekend.  He said, maybe you’re so tired all the time because you spend all your energy trying to make decisions.  He was kidding but I was like. ohmahgosh that’s so true.  I’m the world’s absolute most indecisive person.  Do I want milk or tea with dessert? Let’s stand in the kitchen for 5 minutes and try to decide between the two.

So Miley on SNL.  Did you watch? I watched and actually liked the last song she sang.  I’m not a Miley fan past her Hannah Montana days, but I really liked the screaming part on the song.  

Look at me, making a decision and having an opinion.  I am also the world’s least opinionated person (unless we’re talking about eating disorders or disordered eating or people who eliminate entire food groups…then I have opinions).  And I guess I also have opinions on Miley.  I think this means I’m becoming a grown up. 

Ooo and I also have opinions on this soup.  It’s fab and you should make it and eat it for 3 days straight.

Roated Verde Salsa Pulled Pork Soup

Yield: 6 servings

Prep Time: 10 minutes

Cook Time: 4 hours (inactive crockpot time)

Total Time: 4 hours 10 minutes

Ingredients:

2.5 lb boneless pork
2 cups roasted verde salsa
1, 15oz can black bean soup
1, 15oz can pinto beans, rinsed and drained
1/2 onion, finely chopped
1 large carrot, cut into 1/2" rounds
2 cups cherry tomatoes
3 tablespoons tomato paste
1 small lime, quartered
2 tablespoons ancho chili powder
1/2 tablespoon cumin
2 cups water
toppings: thinly sliced radishes, extra sharp cheese, cilantro, doughy tortillas

Directions:

In a crockpot, combine all ingredient, except for the toppings.  Yes, even the quartered lime goes into the crockpot.  You'll get it out later.  Turn crockpot on high and let cook 3 1/2 hours.  Then remove your pork and shred.  Stir the pork back into the crockpot and let cook for 30-60 minutes, or until pork is cooked through.  Stir soup to look for lime pieces and remove them.  Eat soup immediately with toppings or store soup in the fridge for up to a week and get home from work super tired from the day but super excited because you have delicious soup to top with cheese, cilantro and tortillas.
