5-minute Breakfast Oatmeal Cookie for ONE!

Oooh look, another breakfast cookie recipe.

While my favorite breakfast cookie is probably this one, I’ve recently been making this single serving version.  It’s the easiest and takes 5 minutes.

And it seems very deep dish cookie-like, which is always enjoyable.

Do you have a favorite cookie? There’s this place in Houston called Tiny Boxwoods that makes EPIC chocolate chip cookies.  They posted this picture of a mountain of cookie dough.  I mean, THAT is what dreams are made of.

I would say it’s worth coming to Houston to try their chocolate chip cookies.  I’ve heard they stack two balls of dough together before they bake them but they freeze the top ball of dough so it makes the cookie stay thick and not spread too much.  It’s genius.  And I have no idea if that’s really how they do it.  It may just be a cookie rumor.  There are far worse rumors to spread.

Now the ease of this cookie is ridiculous.  It is ready so speedy quick.  

So in case you’re a person who immediately needs breakfast the second they jump out of bed and can’t stand to wait 20 minutes while something bakes in the oven…yes, if you’re that person, this cookie is for you.

Single-Serving Breakfast Oatmeal Cookie

Yield: serves 1

Prep Time: 4 minutes

Cook Time: 1 minute

Total Time: 5 minutes

Ingredients:

1/3 cup oats
3 tablespoons oat flour
3 tablespoons milk
1/2 tablespoon maple syrup
1/2 tablespoon coconut oil, melted
1/2 teaspoon cinnamon
1/2 teaspoon vanilla extract
1/8 teaspoon baking powder
pinch salt
topping: nut butter of choice

Directions:

In a bowl, combine all ingredients until a dough forms.  Press dough into a greased shallow dish or ramekin.  Microwave for 30 seconds to 1 minute, or until it reaches your level of done-ness.  I left mine a little doughy (per usual).
