Andrew seems to hate my long recipe titles. He’s all like, why do you have to include all the ingredients in the recipe title?!

Well, because I do.  I like long recipe titles.  They’re clear and tell you exactly what you’re getting.  Ain’t no one got time for the vague-ness of a recipe title like, avocado toast.  Gimme DETAILS!!

So last Friday.

I woke up ready for a typical get-blog-work-done Friday + I had a fun lunch date planned with my mom + my best friend + her baby + my best friend’s mom. It was gonna be such a great day.

Around 7:15am I was laying in bed planning my day.  I knew first I wanted to get Friday’s blog post up, but then somewhere in my subconscious God was yelling, I think you’re forgetting something.  So I went through my work emails and realized that a training I was attending for work that I thought started on Saturday actually started that morning.  So I got out of bed with an, oh crap! and threw on pants and a shirt and headed towards the med center (and I grabbed breakfast…because priorities).  

I hate going to the med center.  

I have a lot of bad memories there (that’s a post is for another day…or a post for never) AND parking is always awful down there, which just adds to the dread of having to be in that area.

Phew.  So I made it down there on time, but that is my explanation for why no blog post happened on Friday…because I lack organization.

Sometimes I feel so weird.

I’m such a perfectionist that it’s almost paralyzing at times…like I procrastinate doing things because I know they’re not going to be perfect and so I just don’t get anything done.  I’m not sure how that applies to missing posting on Friday, but it’s just one of the many realizations I’ve had about myself lately.  Yay, sharing.

Let’s get into this recipe.  I was trying to think of ways to make avocado toast less basic and more exciting.  Then I was like, what can you do with bread to make it more exciting? You can 1) add nutella OR 2) you can french toast it.  SO I went for the french toast option, since nutella + avocados didn’t seem like a good combination.  

Unless it was like a nutella chocolate pudding made with avocados.  I think I could support that.

beet hummus avocado toast french toast | immaEATthat.comSo you toss some hummus ingredients into a food processor.  I know hummus is supposed to be made with garbanzo beans, but I only had great northern beans so that had to do.  I also roasted a beet to add in.  I mainly did this because beets are the prettiest colored vegetable and I thought it would make avocado toast even more gorgeous.  I mean, the whole thing just looks like a coloring book with the bright, bright pink and soothing green.

And most importantly, there’s goat cheese.  Ohhh, and cilantro.  I live in a cilantro-filled world.  It’s a dream, as is this toast.  And this isn’t just boring toast, it’s fancy toast.

Beet Hummus Avocado Toast French Toast

Yield: makes 4 pieces avocado toast

Prep Time: 15 minutes

Cook Time: 35 minutes

Total Time: 50 minutes

Ingredients:

beet hummus
1 small beet
1, 15oz can great northern beans
zest from one lemon
1 tablespoons lemon juice
2 cloves garlic
3-4 tablespoons olive oil
pinch sea salt + black pepper

avocado french toast
4 pieces of your favorite bread (I used a seedy whole wheat from Trader Joe's)
2 large eggs
1/3 cup milk
2 small avocados, thinly sliced
1/2 cup cilantro, finely chopped
1/4 cup goat cheese crumbles
sea salt

Directions:

Preheat oven to 400ºF.  Rinse and scrub your beet.  Cut the ends off and quarter.  Place in foil and drizzle with a bit of olive oil.  Wrap securely in the foil.  Bake for 35 minutes, or until fork tender.  In a food processor, combine all beet hummus ingredients, add hummus one tablespoon at a time until desired consistency is reached.  Process until smooth.

In a shallow dish, combine eggs and milk.  Add in bread and allow each side to soak for 2 minutes.  Heat a skillet over medium and add a bit of butter into the pan.  Place soaked bread on skillet and cook for ~2 minutes of each side.  Top with beet hummus, sliced avocados, goat cheese, cilantro galore and sea salt.

  2. Haha I love the paper towel/hair thing.  It happens! And I totally didn’t notice the first time around, due to the gorgeous coloring of this dish.  Can’t wait to give it a try!
