Eggplant Pizzas

I pizza-ified eggplant.

I’ve never been able to get on the cauliflower pizza crust bandwagon.  Mainly because it takes SO MUCH effort to shred the cauliflower and then squeeze the moisture out of it and then press it into a pizza crust.  AND then the worst is that it really never tastes that great to me.  So regular pizza crust > cauliflower pizza crust.  And quite honestly, regular pizza crust > eggplant pizza crust.  I’m really selling you on this eggplant pizza idea, right?

But these are totally worth making because 1) they’re yum and 2) they come together quicker than if you were to make your own pizza dough.  Yay quick & easy.

So these.

They’re like little personal pizzas to fill a weeknight dinner with.  Like remember those personal-sized pizza lunchables that you used to eat in elementary school?  Gah those.  The crusts tasted like styrofoam and I loved them so much.  I have no idea why.  I wonder what I’d think if I ate one today.  I think I’d be most disappointed in the cheese.  I’d have to bring my own cheese to the table.  Like…

These eggplant pizzas really taste nothing like a lunchable, so we’re moving on.

The cheese + oregano flavor makes them seem like eggplant parmesan…perhaps next time I’ll coat the entire eggplant piece in parmesan? Perhaps.  That would be smart.

To these you can add any pizza toppings your heart desires.  

I added broccolini, mainly because I think it’s pretty.  

And chicken sausage, mainly because I think it’s delicious and it doesn’t have fennel.  I hate fennel.  I hate fennel more than I hate parsley.  And I hate parsley A LOT.  I would cry over parsley being in a dish.  Okay.  Maybe not that dramatic, but I’d be sad.  The flavor is eww to me.

Speaking of tears…

Did you guys watch the Disneyland 60th anniversary celebration last night? I watched and cried multiple times.  I have such great memories of being at Disneyland and riding Pirates of the Caribbean (the best ride), dragging my grandpa all around the park (or him dragging me all over the park…he LOVED Disney), filling up my autograph book with autographs of all the princesses and then eating fantasia ice cream after a non-stop day.  

The times I remember being most excited were the mornings when we were going to Disneyland.  IT’S THE BEST PLACE!!!

So let’s wrap it up.  

Everyone loves Disneyland.  Everyone loves pizza.  

So make someone you love eggplant pizza, while watching a Disney movie.  It’s a date.

Eggplant Pizzas

Yield: serves 2-3 (makes 6 eggplant pizzas)

Prep Time: 15 minutes

Cook Time: 20 minutes

Total Time: 35 minutes

Ingredients:

1 large eggplant, sliced lengthwise into 1/2" slices
2 chicken sausage links, cooked
1 cup pasta sauce
1 cup broccolini 
3 tablespoons olive oil
2 garlic cloves, minced
8 thick mozzarella slices
1/2 cup feta, crumbled
1/2 cup crumbled goat cheese
1/2 teaspoon dried oregano

 

Directions:

Preheat oven to 400ºF.  Grease a baking sheet.  Place slices of eggplant on baking sheet and drizzle with 2 tablespoons olive oil.  Bake for 15-20 minutes, until eggplant middles are soft and edges are looking crisp.  

While eggplant is baking, heat olive oil in a sauté pan over medium heat.  Add in broccolini and sauté for 6ish minutes.  Sprinkle in garlic and cook until fragrant, about 30 seconds.  

Top baked eggplant slices with pasta sauce, cheese, sliced chicken sausage, sautéd broccolini and a bit more cheese.  Place bake in the oven until cheese is melted, about 4 minutes.  Sprinkle with oregano.  Serve!

  6. I have made portobella mushroom cap pizzas before which are really delicious but I have never tried using other ingredients as crust. I am recently loving cauliflower but I probably wont try the crust thing now :-)
