Scrambled Tofu Breakfast Sandwich

Every once in a while, I’m feeling savory for breakfast.

This was one such occasion.

And this recipe is simple, which is key for breakfast time.  Nobody has time for complicated-ness in the wee-hours of the morning before one’s brain is still snoozing.

Now.

For the love, don’t use boring pieces of wheat bread for this sandwich.  

Do add avocado if you like avocado.  

Don’t skimp on the cheese.  

Do pick a mega sharp cheddar.

Back to the bread! Go to a bakery.  Or go to the bakery section of your grocery store.  If your grocery store doesn’t have a bakery section, go to a more fun grocery store that does have a bakery section.  

So picture this.  You’re in a bakery perusing the bread selection and you just pick the most delicious one without a thought about calories or whole wheat or whatever else diet culture tells us we should or shouldn’t avoid in order to be liked.  We live in a weird time.  Pick the bread you like and move the hell on with your life.  Use the brain space to think about what you want to do with your life.  Or the kind of person you want to be.  Or really anything else.  I went with a 3 cheese loaf because yum.

With the cheese and the cheesy bread and the tofu and the eggs…it’s a fab sandwich combo.

Now.  

I really just think the tofu on this sandwich is a fun way to switch things up.  You could use 2 eggs instead of the tofu, but then it wouldn’t be a tofu breakfast sandwich.  Decisions, decisions.  ENJOY!!!

Scrambled Tofu Breakfast Sandwich

Yield: serves 1

Prep Time: 3 minutes

Cook Time: 3 minutes

Total Time: 6 minutes

Ingredients:

1/4 of a block of tofu
1 egg
couple slices cheese
2 pieces favorite toast
salt/pepper
optional: cilantro

Directions:

Heat a skillet over medium. Add a drizzle of olive oil. Crumble your tofu into the pan. Cook, stirring frequently for 3 minutes. Add in your egg and scramble the egg and tofu together. Now assemble your sandwich.  EAT.
